Ingredients:
2 cups sliced, unbleached almonds
1/2 cup powdered sugar
1 egg white, at room temp.
pinch of salt
Directions:
Preheat over to 300º F.
Crush the almonds with your hands, into small uneven pieces. Whisk the egg white in a separate bowl until foamy. Add your sugar, salt, and almonds, and stir well, making sure the almonds are evenly covered in the egg. Spoon out the almond mixture onto a baking sheet lined with parchment paper (press down with a fork), about 3 inches apart, and bake for 10-15 minutes until golden brown.
Let cool for 5 minutes and if you'd like, you can drizzle with melted chocolate (I used semi-sweet chips). Enjoy!

▶️ The Recipe Chinese Almond Cookies Recipe
▶️ Ingredients:
• 1 cup butter, softened
• 1 cup sugar
• 1 large egg, room temperature
• 1 teaspoon almond extract
• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/4 cup sliced almonds
• 1 large egg white
• 1/2 teaspoon water
▶️ Method and Instructions:
• Preheat the oven to 350 degrees Fahrenheit. Beat butter and sugar together in a large mixing basin for 5-7 minutes, or until light and fluffy. In a large mixing bowl, whisk together the egg and the extract. Gradually add flour, baking soda, and salt.
• Make 1-inch balls out of the dough. Place 2 inches apart on baking pans that haven't been greased. With a fork, flatten gently. Almonds should be sprinkled on top and pressed in place if necessary. In a small dish, whisk together the egg white and the water. Brush the cookies with the egg wash.
• Bake for 8-10 minutes, or until the edges and bottoms are lightly browned. Allow to cool for 2 minutes before transferring to wire racks.

Ingredients
Almonds - ½ cup (crushed)
- 10-12 pc (sliced for garnish)
Butter - 100g
Icing sugar - 75g
Almond extract - 1 tsp
Almond flour - 30g
AP flour - 150g
Baking powder - 1 tsp
Milk as required
Method
•preheat oven at 170°C for 10 mins.
•crush almonds coarse.
•add sugar to the butter and cream the butter until soft, fluffy and pale in colour.
•now add crushed almonds, almond extract, almond flour, AP flour, baking powder and combine.
•add milk little by little, just enough to bring the dough together.
•roll the dough as shown and wrap in a cling.
•Refrigerate for at least one hour.
•Cut in your desired shape.
•bake at 170°C for atleast 20 mins.
•transfer on a cooling rack.
•allow it to cool completely and turn crunchy.
Tips
•add milk little by little so that the dough comes together perfectly and doesn't become loose to handle.
•keep a close eye during baking. Sometimes you just blink and your stuff goes for a toss.
•refrigerate atleast 1 hour before cutting into pieces. It helps in getting clean cuts and slices.
