3 c Flour
1 ts Baking soda
1 Egg
1 ts Almond extract
1 c Sugar
1 1/3 c Shortening
Red food color Sift flour and soda together. Beat the egg and add the extract to the egg. Cream sugar with shortening; add egg; mix thoroughly. Add dry ingredients gradually. Roll into balls 1" in diameter. Place 1" apart on greased cookie sheet. Press thumb gently in center of top of each ball. Touch depression with red coloring. Bake 12 minutes at 350 degrees. -----

Makes about 28 cookies:
4 egg whites
2 cups granulated sugar
¼ teaspoon salt
1 teaspoon pure almond extract
1 teaspoon orange blossom water
1 teaspoon pure vanilla extract
4 cups almond meal (blanched almond flour)
Optional garnish: 7 ounces semi-sweet or dark chocolate, melted
1 cup blanched sliced almonds
Preheat oven to 325 °F, 165 °C.
In a large mixing bowl whisk the egg whites on high speed until thick and stiff.
In a large mixing bowl combine the almond flour, salt, sugar, almond extract, and orange blossom water. Mix together until combined.
Fold the whipped egg whites into the almond flour mixture until a dough is formed.
Note: For a more dense, firm cookie, keep the dough very dense by adding up to 455 grams of almond flour to it. Dense cookie dough will not spread during baking. For a flatter cookie, allow the dough to be slightly looser.
Using a small ice cream scoop or 2 spoons, scoop walnut-sized pieces of dough onto baking trays lined with parchment paper.
Sprinkle some sliced almonds over the top of each cookie.
Bake on the center rack of the oven for 15 minutes. The cookies will be pale and slightly golden around the edges.
If baking 2 trays together, make sure to rotate the baking sheets from top to bottom halfway through baking.
Allow the cookies to cool completely.
If decorating with chocolate, spread some melted chocolate on the bottom of each cookie place the cookies chocolate-side up on the baking tray until they set. You may also place them in the freezer or refrigerator for 15-20 minutes or until the chocolate hardens.

Chinese almond cookies are a great recipe to make for Chinese New Year. And, Chinese almond cookies can easily be made vegan.

Ingredients:
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup vegan margarine
1/2 cup vegetable shortening
3/4 cup raw sugar
1/4 cup applesauce
2 1/2 teaspoons almond extract
1/4 pound whole almonds, blancehed
Directions:
Preheat oven to 325 degrees Fahrenheit.
In a large mixing bowl, cream together vegan margarine, vegetable shortening, and raw sugar.
Add in applesauce and almond extract, and continue to mix.
Shift in all purpose flour, baking powder, baking soda, and salt.
Mix slowly for 1 minute, then increase speed of mixer to about medium until all the ingredients come together to form a dough.
Use a cookie scooper to scoop the almond cookies out onto a cookie sheet. Lightly press the vegan dough rounds with your thumb to flatten them for even cooking and to create an indentation for the almonds.
Place 1 almond in the indentation of each vegan almond cookie. Bake for 15 minutes until cookies are puffed up and brown.
Place on cooling sheet to cool and store in an air tight container at room temperature.

For caramel sauce
Granulated sugar - 1/2 cup
Water - 2 tbsp
Hot heavy / fresh cream - 1/3 cup
Salted butter - 2 tbsp
Salt - 2 pinch
For cookie
Unsalted butter - 3/4 cup + 2 tbsp
Granulated sugar - 1/2 cup
Milk - 2 tbsp
Vanilla essence - 3/4 tsp
All purpose flour - 1 1/2 cup
Salt - 2 pinch
Chopped almond - 100 gm
Melted chocolate
Preheat oven - 165*c
Baking - 165*c for 16 - 18 minutes
