How To make Almond Cheese Horseshoe
2 c Bread flour
1/4 c Water
1/4 c Sugar
1 Egg; or 1/4 cup egg sub.
1/4 ts Salt
1 1/2 ts Act. dry yeast
1/4 c Margarine
ALMOND FILLING:
-Combine 8 oz Cream cheese; softened .
-I prefer 4 oz 1/8 c Sugar, and
2 tb Almond Extract
Make on dough cycle and remove to greased bowl. Rest in refrigerater 30 min. Knead breifly on floured board and roll into 15x10 in. rectangle. Spread filling leaving 1/2 inch border on all sides. Starting long side, roll into jellyroll and tuck and seal ends. Seal long seam and place on greased baking sheet, shaping into horseshoe. Cut slits with scissors through top of dough at 2 inch intervals. Cover and let rise in warm place till double in bulk, about 45 minutes. Brush top with beaten egg or egg sub. and bke in preheated oven 375 degrees for 15 to 20 min. till>>>>>> golden. Cool slightly and drizzle with powdered sugar glaze. ALMOND FILLING: Combine in small bowl and mix to spreading consistency. You may add more extract and sugar to taste. Also you may use 1 T. milk or more to thin depending on type of cream cheese. For a really festive one add candied cherries in slits and sprinkle with sliced almonds before baking. ---

Ingredients :
- 75 grams (1/3 cup) margarine
- 100 grams (1/4 cup + 3 tbsp) salted or unsalted butter
- 100 grams (0.8 cup) powdered sugar
- 1 egg yolk
- 1/4 tsp salt
- 100 grams (1 cup) almond flour
- 230 grams (1 cup + 7/8 cup) all purpose flour
- 1/4 tsp baking powder
- dark cooking chocolate, for dipping
- powdered sugar, for dusting

*EASY* MATCHA ALMOND FLOUR COOKIES | 100% GLUTEN FREE | LOW CARB | LOW SUGAR | SOFT AND CHEWEY
You cannot go wrong with these MATCHA ALMOND FLOUR COOKIES! I love the green colour of the matcha and they are perfect to make around St. Patrick's Day! I've added some Lucky Charm's marshmallows for EXTRA CUTENESS (SERIOUSLY), but you can leave them out as these cookies are so good on their own as well!
These cookies at 100% GLUTEN FREE and can be made DAIRY FREE by substituting the butter with coconut oil :)
They all come together in just one bowl and come out super soft and chewey. I can't wait for you to give these a try! They make the perfect afternoon snack or even.. dare I say breakfast? People eat lucky charms for breakfast right?
Matcha is LOADED WITH ANTIOXIDANTS and almonds are a world famous super food, so you know this is a MATCHA MADE IN HEAVEN HEHE! :)
My Almond Flour Chocolate Chip Cookie Recipe:

Ingredients:
- 2 TBSP room temperature butter (or sub coconut oil for dairy free)
- 1 room temperature egg
- 1 tsp vanilla
- 1/3 cup of white sugar (or your sweetener of choice)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 TBSP culinary grade matcha powder
- 2 cups almond flour
- OPTIONAL BUT HIGHLY RECOMMENDED GARNISH: Lucky Charms marshmallows
Directions:
1. Combine all ingredients except almond flour and garnish in a bowl
2. Blend with a hand mixer until smooth
3. Add the almond flour and blend until smooth
4. Preheat oven to 375F
5. Grease pan or use parchment paper
6. Scoop out 1 TBSP portions, roll in a ball, and flatten with your palms. They should be about 1/2 (1cm) thick.
7. Add garnishes and smooth out edges if necessary.
8. Bake for 7 minutes or until bottoms are golden brown
9. Let cool for 5 minutes

►16 Tbsp (1/2 lb) unsalted butter, softened
►½ cup (62 grams) powdered sugar, plus more for rolling cookies

Melt-In-Your-Mouth Peanut Cookies For Chinese New Year Gifting | The Chinese New Year Series
Gifting cookies and sweet goodies to friends and loved ones is an indispensable part of Chinese new year. I can never bring myself to gift large quantities to pineapple tarts because each tart takes so much work. These peanut cookies are perfect for gifting – it doesn’t take a full day’s work and they are incredibly moreish. Toasting the peanuts slowly in a wok makes the cookies especially fragrant and I wouldn’t skip this step.

Peanut cookies
Makes 40-50 cookies
150g skin-on peanuts
125g plain flour
65g icing sugar
¾ teaspoon salt
15g soft butter
About 80g peanut oil
1 egg yolk, beaten with 2 tsp water
1/ Dry fry peanuts in a wok over the lowest heat until the skins are charred, about 20 minutes. The peanuts should taste fragrant.
2/ Cool and remove skins.
3/ Grind the peanut until it resembles a fine powder.
4/ Preheat the oven to 160C.
5/ Sieve flour and sugar.
6/ Mix with the ground peanuts and salt. Taste and add more salt if desired.
7/ Add the butter, then the oil gradually to form a crumbly but cohesive dough.
8/ Weigh 7g balls and flatten slightly.
9/ Make an indent on the cookies with a pen cap.
10/ Egg wash the cookies and bake 15 minutes or until golden brown and cracked.
