▶️ INGREDIENTS for Quinoa Recipes: (3 to 4 servings)
1 cup/190g Quinoa (soaked for about 30 minutes)
3 Tbsp Olive oil
1+1/2 cup 200g Onion
1+1/2 Tbsp Garlic or to taste - finely chopped
1/2 Tbsp Ginger or to taste - finely chopped
1/2 Tsp Turmeric
1 Tsp Paprika (NOT SMOKED)
1 Tsp Ground Cumin
1 Tsp Ground Coriander
1/4 Tsp Cayenne Pepper (Optional)
Salt to taste (I have added total 1/4 + 3/4 teaspoon of pink Himalayan salt)
150g / 1 cup Carrots
130g / 1 cup Green Beans
200g / 1 cup Tomatoes - chopped
70g / 1/2 cup Frozen Green Peas
325ml / 1+1/3 cup Water OR AS REQUIRED (???? Sometimes one batch of quinoa can be more dry than the other, SO ADJUST THE COOKING WATER QUANTITY ACCORDINGLY)
100g / 3+1/2 cup Spinach - LEAVES ONLY (I have added baby spinach)
Lemon juice to taste (I have added 1/2 tablespoon)
Ground Black Pepper to taste (I have added 1/2 teaspoon)
1/2 cup / 70g Cashews (Toasted)
2 Tablespoon / 5g Cilantro (Coriander leaves) - very finely chopped
▶️ METHOD:
Start by thoroughly washing the quinoa a few times until the water runs clear and then soak in water for about 30 minutes. Once the quinoa is soaked, drain the water from the quinoa and let it sit in the strainer.
To a heated pan add the cooking oil, onion and 1/4 teaspoon salt. Adding salt to onion will release its moisture and help it cook faster so please don’t skip it. Fry the onion on medium to medium-high heat until it just starts to brown.
Once the onion has starts, add the finely chopped garlic and ginger and fry for 30 seconds. Then add carrots, green beans and spices (Turmeric, Paprika,Ground Cumin, Ground Coriander, Cayenne Pepper) and mix well. Fry on medium heat for about 2 to 3 minutes. Then add the soaked quinoa, chopped tomatoes, frozen peas, salt and water to the pan. Bring it to a vigorous boil. Then cover the lid and reduce the heat to low. Cook on low heat for about 20 to 25 minutes or until the quinoa is cooked.
Once the quinoa is cooked, turn off the stove. RIGHT AWAY ADD THE SPINACH LEAVES WHILE THE QUINOA IS STILL STEAMING HOT, SO THAT THE SPINACH CAN WILT FROM THE HEAT. Along with lemon juice and ground black pepper and mix thoroughly BUT GENTLY. Top it with toasted cashews and chopped cilantro (coriander leaves). Serve hot.
▶️ IMPORTANT TIPS:
???? Thoroughly wash the quinoa, this will get rid of any impurities/gunk/bitterness and will give a cleaner taste to the quinoa
???? Every stove is different SO ADJUST THE HEAT AND COOKING TIME AS REQUIRED
???? Adding salt to onion will release it's moisture and will help it cook faster so please don’t skip it

FAST Vegetable Stir Fry | EASY Chinese Veggies Recipe
LEARN HOW TO COOK A FAST VEGGIE STIR FRY THAT'S BETTER THAN TAKEOUT

Ingredients:
4 cremini mushrooms
1/4 red onion
3/4 green bell pepper
3/4 red bell pepper
60g broccolini
1/2 cup baby corn
1 tbsp hoisin sauce
1 tsp dark soy sauce
1 1/2 tbsp soy sauce
1 tsp black vinegar
splash of toasted sesame oil
drizzle of olive oil
Directions:
1. Quarter the cremini mushrooms. Roughly chop the red onion, green bell pepper, and red bell pepper. Chop the broccolini into bite sized pieces
2. To make the sauce, combine the hoisin sauce, both soy sauces, black vinegar, and toasted sesame oil
3. Heat up a nonstick pan to medium heat. Drizzle in some olive oil
4. Sauté the red onion and both bell peppers for a couple of minutes
5. Add the mushrooms and broccolini. Sauté for 3-4min
6. Add the baby corn and sauce. Sauté another couple of minutes, then plate and serve

Chicken and vegetable medley in a light gravy. FAST Cooking System
The importance of vegetables is well recognized by Americans, but the Standard American Diet contains only a fraction of the vegetables recommended by nutritionists and public health authorities. The reason is simple, because most Americans consider vegetables to be boring and unappetizing. However, vegetables are tasty and delicious when they are properly cooked and presented.
One lesson that I have learned as a cook is that when food is presented in a different context, the appeal could be very different. One of the most effective ways to present food with greater interest and attraction is by presenting them in a mixture of different food ingredients that blend well together. Over the years, my personal experiences have taught me how to increase my vegetable consumption by creating vegetable medley. The diversity of different vegetable creates a holistic approach to food consumption. The end result is a complex flavor and texture that appeals to all our senses.
When I was a child, I loved a dish with different kinds of vegetables that come in a light gravy. I came to love vegetables mainly through this dish. The gravy coats the vegetables with great taste and smoothness, and everything blends perfectly with the white rice. I remember the texture of the dish rather than the individual components. The vegetables are cut into small pieces and I consume them as a whole rather than individual pieces. This creates a holistic dinning experience, which I still remember fondly.
In this video, I have recreated this dish that is not based on a recipe, because there is none. Instead, I use the different cooking templates that I have in creating a dish that is my image of those meals when I was a child sitting in our family apartment. This dish is made easy with other attributes of my FAST Cooking System in flavor chasing, advanced prepping, and stir-frying. To me this is the essential pleasure and reward of home cooking to be able to conjure up dishes with recollection and creativity.
It was rewarding to me in seeing my son's best friend, Bob, who dislikes vegetables, to eat two servings of this dish with relish of the vegetables that he generally dislikes. I have known too many people could not find vegetables appealing with dire consequences to their long-term well being. However, this does not have to be the case, because there are many cultures around the world, where vegetables are treated with the highest esteem in their culinary universe. For the future generations, I want to be able to make a change no matter how small that it might be, because the current status quote is unsustainable.
