How To make Aji Molido (Chile Paste Yellow)

chiles, aji, yellow, chopped, substitue yellow wax hot, chiles or jalapenos

Directions:
Remove seeds and stems. Combine all ingredients in a food processor and puree to a fine paste. This is a HOT condiment.
This South American chile paste can be used as a substitute whenever fresh chiles are called for.
It will keep for two weeks or more in the
refrigerator. For longer storage, increase the vinegar and reduce the amount of olive oil.

Ingredients (for 4 servings)
- 700g Raw Cubed Chicken Breast
- 1 tbps Oregano
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tsp Chilli Powder
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Olive Oil
- 1/2 Lemon Juice
Cook on high heat for 3-4 mins each side till golden brown
- Shredded Lettuce
- Chopped Tomatoes
- Garnish Coriander (optional)
Garlic Sauce
- 150g Fat Free Greek Yogurt (any yogurt works)
- 50g Light Mayo
- 2 Minced Garlic Cloves
- Chopped Coriander/Cilantro
- 1/2 tsp Cumin, Salt, Pepper
- 1/2 Lemon Juice
You can store this sauce for multiple days in a bottle or container, perfect to prep in batches
Golden Rice
- Basmati Rice (207g uncooked gives about 560g cooked weight | 140g Cooked Rice per serving)
- season with Turmeric, Cumin, Paprika, Garlic, Salt
- Add water then bring to a boil then simmer on low heat for 8-10 mins till fully cooked
Distribute into 4 equal servings and enjoy!

Important notes
- When reheating the meal prep, i would put the sauce and lettuce seperately then heat the rice and chicken in a microwave
- You can store the sauces in little containers in the meal prep box

Aji Rocoto Sauce
Ingredients …….
2 Rocotos Peppers, remove seeds carefully
1 small red onion
2 cloves garlic
1/4 cup vegetable oil
1/4 cup water
1/2 lime juice
2 tablespoons chopped scallions
2 tablespoons corte brunoise red onion.
1 teaspoon salt
Preparation …………
In a frying pan, add 2 tablespoons oil
Add rocoto.Sauté for two minutes
Then, add onions and garlic
Sauté for two more minutes add salt
And let it cool.
When it’s ready, place in blender
Add the remaining oil and water
Blend until smooth.Pour in a bowl
Add onions cut in corte brunoise
Add scallions,Squeeze 1/2 a lime
Salt to taste and mix.
It’s ready to add to your favorite dish.
Salsa salsa the Rocoto
Ingredientes………..
2 Chiles Rocoto, quitar las semillas con cuidado
1 cebolla roja pequeña cortar en pedazos
2 dientes de ajo
1/4 cup de aceite vegetal
1/4 taza de agua
1/2 jugó de limón
2 cucharadas de cebollines picados
2 cucharadas de cebolla morada corte brunoise
1 cucharadita de sal
Preparación…………..
En una sartén, agregar 2 cucharadas de aceite.Añadir rocoto
Saltea por dos minutos.Luego, agregue las cebollas y el ajo.
Saltea por dos minutos más.Agregue sal luego dejar enfriar
Cuando esté listo, colocar en la licuadora, Agregar aceite y agua
Batir hasta que esté suave.
Vierta en un tazón.Agregar las cebollas cortadas en corte brunoise
agregar cebollitas verdes
Exprimir 1/2 limón,salt al gusto y
Mezclar.
Está listo para agregar a tu plato favorito.

1 TAZA DE CILANTRO FRESCO
3 CHILES JALAPEÑOS ( SI TE GUSTA MÁS PICOSO PUESDES AGREGARLE UNO O DOS MÀS)
1/2 Taza de mayonesa
2 CUCHARADAS DE QUESO PARMESANO
2 CUHARADAS DE ACEITE DE OLIVA
1 LIMON (JUGO)
2 CUCHARADAS DE VINAGRE BLANCO
2 AJOS
SAL ( ALGUSTO)
PIZZA SAUSE RECIPE | Homemade Pizza Sause | Sandwich Spreed | Red Chilli Sause
For making makhani sauce Ingredients:
• Oil 1 tbsp
• Cumin seeds (jeera) 1tsp
• Onions 1 medium size (sliced)
• Garlic cloves 4-5 nos.
• Ginger 1 inch
• Green chillies 1-2 nos.
• Whole Kashmiri red chillies 4-5 nos.
• Tomatoes 4-5 medium size (diced)
• Cashew nuts 7-8 nos.
• Salt to taste
• Water 200ml
• Butter 1 tbsp + Oil 1 tsp
• Red chilly powder 1tbsp
• Coriander powder 1tbsp
• Sugar 1 tbsp • Salt to taste
• Garam masala 1 tsp
• Kasuri methi 1 tsp
• Fresh cream 3 tbsp
• Fresh coriander 1 tbsp
• Chilly flakes
Method:
• Heat oil in a pan add cumin seeds, allow to splutter and add all the ingredients and cook for 4-5 minutes.
• Add water, cover and cook further for 8-10 minutes. Cool down the mixture to the room temperature and grind into a fine paste.
• Heat butter and oil in a wok, add red chilly powder and coriander powder and sauté it for a minute.
• Add the Makhani gravy and cook it for 5-6 minutes.
• Add sugar, salt to taste, garam masala, kasuri methi and fresh cream and cook for 2 minutes.
• Add freshly chopped coriander leaves. Allow it to cool down to room temperature or can be stored in fridge as well.
