rice vinegar

sugar

teaspoon
salt

black pepper

medium
cucumber, peeled
1/2
cup
red onion, thinly sliced
2
tablespoons
cilantro leaves, chopped
1
small
red or green chili, fresh
Directions:
In a medium bowl, stir vinegar, sugar, salt, and pepper until sugar and salt are dissolved.
Quarter cucumber lengthwise. Remove seeds. Cut quarters crosswise into 1/8 inch thick slices.
Add cucumber, onion, cilantro and chili to vinegar dressing; toss until combined.
Cover and marinate in the refrigerator for 3 hours, stirring occasionally.

1.5 kg Daikon Radish
200g Fresh Chilies (small spicy & long less spicy)
70g Garlic
50g Ginger
Step 2:
To assemble
200ml Mustard Oil
50g Mustard Seeds
40g Red Chilies Flakes (use to your taste)
2 tbsp Coriander seeds
1 tbsp Salt
1 tbsp Turmeric powder

Amla Pickle | आंवले का जबरदस्त अचार | Instant Amle Ka Achar Recipe | Sanjeev Kapoor Khazana
आंवले का अचार is an easy way to include Amla in your diet. It is very good for the eyes and rich in vitamin C and super simple to make. Boil gooseberries-Amla and mix with spices to make this tasty Amla pickle. You can refrigerate it to use longer. Check out the video to know an easy pickle recipe of ginger and raw turmeric. This delicious pickle made out of gooseberries is the perfect accompaniment with dal and roti or rice.

AMLA PICKLE
Ingredients
15-18 Indian gooseberries (amla)
Salt to taste
¾ tsp turmeric powder
4 tbsps oil
1 tsp fenugreek seeds (methi dana)
5-6 green chillies
2 inch ginger, peeled and sliced
1 tbsp fennel seeds (saunf)
1 tbsp mustard powder
1 tbsp red chilli powder
2-3 tbsps grated jaggery
¾ cup vinegar
2 tsps onion seeds
Method
1. Boil gooseberries with salt and ¼ tsp turmeric sufficient water in non-stick pan till the fruit is soft.
2. Drain, cool down gooseberries to room temperature and cut them into wedges.
3. Heat oil in another non-stick pan, add fenugreek seeds and let them change colour.
4. Roughly break green chillies and put into a mixer jar and grind with ginger and some gooseberry wedges to a fine paste.
5. Add fennel seeds to the pan and mix well. Add ground paste and mix well. Add remaining turmeric powder and mix well. Cook till the mixture is lightly browned. Add mustard powder, red chilli powder and gooseberry pieces, jaggery, salt, ½ cup vinegar and mix well.
6. Add onion seeds and mix well. Switch off the heat, add remaining vinegar and mix well.
7. Transfer the prepared gooseberry pickle into a sterilized glass container and serve as required.
