How To make Aebleskivers
3 each egg
2 cups buttermilk
1 teaspoon sugar
1/2 teaspoon salt
2 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon cardamom
Beat yolks of eggs with buttermilk.
Mix together sugar, salt, flour, baking powder, baking soda, and cardamom.
Beat egg whites until stiff.
Mix egg yolk-buttermilk mixture with dry ingredients. Add egg whites, carefully folding them in so that they don't break down.
Heat aebleskive pan. Put 1 tsp salad oil in each hole and fill completely with batter. Let bake until slightly crusty on bottom. Turn slightly with a knitting needle or skewer. Continue cooking, turning the ball to keep it from burning, until the knitting needle comes out clean when stuck in the center.
Serve aebleskive hot with powdered sugar, jam, and jelly.
Notes included with recipe: For those of you who are unfamiliar with aebleskive, it is a baked delight made with a pancake-like batter, cooked in a special pan that turns the aebleskive into a crusty ball, and is known as the "Danish Doughnut." As you can tell, it is a little difficult to give aebleskive an easy definition other than to tell you that it is good enough to go ahead and order the pans if you are likely to serve breakfasts and brunches to family and friends.

Make Delicious Danish Pancakes with the Electric Ebelskiver Maker | Williams-Sonoma
Indulge your sweet tooth by making pancakes in an instant with the Electric Ebelskiver Maker. In this video, Williams-Sonoma Product Expert Kara shows us how to use the Electric Ebelskiver Maker to make delicious pancakes filled with strawberry jam.
Kara starts by heating the Electric Ebelskiver Maker using the preset heat settings and adds some butter to each well so that the pancakes release easily. She then adds a layer of pancake mix and tops with a spoonful of strawberry jam. You can experiment with a variety of flavors and add any other jam, chocolate sauce, caramel sauce or even cheese for savory ebelskivers. After the middle layer is done, cover the mixture with a final layer of pancake mix.
Once the ebelskivers cook for a couple of minutes on one side, flip them. After the ebelskivers are completely cooked on both the sides, transfer them to a serving plate. Sprinkle some powdered sugar over the ebelskivers and serve them with some fresh strawberries and berries.
Another great advantage of this electric pancake maker is that it is very easy to clean. Just wipe the pancake maker with a damp cloth after it cools down. Have fun experimenting with a variety of other pancake mixes and fills!

Æbleskiver Pancake Puffs (Danish pronunciation: [ˈɛːbləˌsɡiːwɐ], [singular: æbleskive]), also called appleskives are traditional pancakes in a distinctive shape of a sphere. The name literally means apple slices in Danish, although apples are not usually an ingredient in present-day versions. Somewhat similar in texture to European pancakes crossed with a popover or Yorkshire pudding, æbleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usually aebleskiver or ebleskiver.
Æbleskiver are cooked on the stove top by baking in a special pan with several hemispherical indentations. The pan exists in versions for gas and electrical stoves (the latter with a plain bottom). Pans are usually made of cast iron, allowing good heat retention.
