How To make A Barrel Of Muffins
5 ts Baking soda
2 c Boiling water
1 c Canola oil
1 c Sugar or less
6 ea Egg whites
4 c All-Bran cereal
2 c Bran flakes
5 c Unbleached white flour
4 c Non-fat buttermilk
Mix baking soda and water. Set aside to cool. Cream oil and sugar. Add egg whites and mix well. Combine bran cereals and flours. Add to creamed mixture and stir in buttermilk. Add water and baking soda and mix. Store the batter in a covered container in the refrigerator. When ready to bake, preheat oven to 375 degrees and spoon batter into lightly oiled or paper lined muffin tins. Return extra batter to refrigerator. Bake muffins for 20-25 minutes. Makes 60 muffins. ~

2lbs ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper(color doesn't matter)
1 1/2 sleeves crushed Ritz crackers
3 eggs
4 oz. shredded Colby Jack cheese
1/2 cup milk
1 tsp salt
1/4 tsp black pepper
Topping
1/2 to 3/4 cup ketchup
2 tbsp brown sugar
1 tsp mustard
Mix well.
Preheat oven to 350. In large bowl, mix eggs, crackers, onion, bell pepper, cheese, milk, salt and pepper. Add ground beef and mix to combine, don't over mix. Place meatloaf on parchment paper or foil lined baking sheet. Form into loaf. Bake for 30 min. Remove from oven, spread topping over meatloaf and bake an additional 30-40 min until 160 degrees inside.

How To Make Pistachio Muffins ~ Everyone's Favorite Pistachio Muffins
INGREDIENTS:
1 pkg. yellow cake mix
1 pkg. (4 serving size) Pistachio flavor instant pudding & pie filling
1/2 cup crushed pistachios
4 eggs
1 cup sour cream
1/4 cup oil
1/4 cup water
1/2 tsp. almond extract
5-7 drops green food coloring (optional)
Preheat oven 350 degrees Farenheit
In large bowl mix together cake mix and pistachio instant pudding.
In another bowl combine eggs, sour cream, oil, water, almond extract and food coloring.
Add wet ingredients to dry ingredients and mix just to combine.
Do not overmix.
Add 1/4 cup pistachio nuts and fold in. (reserve half)
Fill muffin pan 3/4 full.
Drizzle combo of 1/4 cup crushed pistachio nuts and 2 tbsp. turbine sugar over tops of muffins.
Bake at 350 degrees Farenheit for 18-20 minutes or until done.
I made 18 nice size muffins from this recipe.
Enjoy.

1/4 cup of evaporated milk

1 cup of unsalted butter
1/3 cup honey
3 tbsp confectioner’s sugar

My Copycat Version of Cracker Barrel's Blueberry Muffins
This is one of the best tasting muffins that I have made from home that the taste reminds me of Cracker Barrel's blueberry muffins. I'm sure you will be amazed too.
Preheat your oven to 350 degrees F.
Ingredients:
1- 15.2 ounce White Cake Mix
1- 3.4 ounce Instant Vanilla Pudding Mix
4- large Eggs
1/2 Cup (4ounces) Vegetable oil
3/4 Cup Milk
1 teaspoon Vanilla extract
12 ounces Blueberries (frozen or fresh)
Tip- if using fresh, toss them in flour before adding to batter to prevent them from all going to the bottom of the pan.
