How To make "Cock 'N Bull" Stew
Ingredients
1/4
cup
steak sauce
2
each
bouillon, chicken, cubes
1
teaspoon
salt
1/2
teaspoon
pepper
1
teaspoon
sugar
1/2
cup
water, hot
2-3
pound
chicken, thighs
1
pound
beef, lean, stewing, cut in 1-1/2 inch cubes
1
each
onion, chopped
2
each
potatoes, peeled, cubed
2
each
carrots, peeled, sliced thin
16
oz
tomatoes, stewed, can
1/4
cup
flour
Directions:
Combine steak sauce, bouillon cubes, salt, pepper, sugar and hot water in crockpot; stir well. Add remaining ingredients except flour; mix carefully.
Cover and cook on Low setting for 7 to 10 hours or on high setting for 4 hours. Before serving, remove chicken and bone, and return meat to crockpot; stir well.
To thicken gravy, make a smooth paste of flour and 1/4 cup of juices from stew. Add to crockpot. Cover and cook on High setting until thickened.

Modern Classic: The Business
The Business is the reformulation of a Bees Knees by changing the citrus from Lemon to Lime. That's it. Some of you may scoff at this but it has always been my contention that changing any element in a cocktail (even minor ones) changes the cocktail completely and therefore is a new cocktail. This is a perfect example of that and is why I chose to share it with you guys. Also lime is much more tart than Lemon which is a bit sweeter. When the cocktail renaissance hit in full swing, ushered in by Dale DeGroff but definitely expanded by those Milk & Honey gents a lot of their creations were basically reformulations of old cocktails. This is a lot of the reason I have a problem calling a Vodka Martini a Martini at all. Technically it's not. Another note: if you say Business very fast it sounds like Bees Knees, coincidence? I think not. A testament to Petraske's brilliance.
This cocktail was created by Sasha Petraske around 2002. Petraske was the founder, owner and operator of Milk & Honey and a growing number of important cocktail bars including Dutch Kills, The Everleigh in Melbourne Australia and The Varnish in Los Angeles.
