This is the best ever beef pot roast made in the oven. The beef is packed with all the right flavors, seared and slowly baked in a delicious flavor packed sauce. This beef pot roast is a delicious comforting dish.
INGREDIENTS
2.5 to 3 lbs beef chuck roast ( i used 2.8 lbs)
Salt and pepper to your taste ( i used 1/2 Tbs salt and 1 Tsp pepper)
1 tsp oregano
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
2 Tbs olive oil to saute veggies
1 large onion, cut up
2 stalks of celery
2 large carrots, cut up
5 cloves of garlic, minced
salt and pepper to season veggies
2 to 3 Tbs oil to sear meat
2 Tbs butter to make sauce
2 Tbs flour
1/4 cup red wine
1 cup chicken broth
1 Tbs Worcestershire sauce
3 Tbs tomato paste
2 Tbs brown sugar
2 bay leaves
fresh thyme (i did not measure)
3 to 4 sprigs of rosemary

This as a delicious fall apart tender pot roast recipe, I cook it slow, and it is smothered in a heavenly gravy that is made with sweet carrots, onions, celery and perfect seasoning. I love to side my pot roast with mashed potatoes and homemade dinner rolls, it is a meal fit for a King. This hearty dinner recipe takes me back to my childhood when my mom often fixed it on weekends and it was one plate I licked clean. This pot roast recipe can be prepared with no effort at all, and it is a meal that is complete. Nothing beats a classic pot roast dinner, it is a perfect meal to serve when having company or just a special treat for the family...I always choose a nice big chuck roast, then season it well, prep it and before you know it you have a hearty delicious dinner ready to impress. Along with my seasoning, I like to add fresh rosemary, thyme, garlic and good chicken and beef stock and 1 good Tbsp of bacon grease for added flavor. My pot roast is ready to enjoy after about 3 hours, every minute is worth it.
INGREDIENTS ... 325° (3 hours)
3&1/2 LB. Chuck roast (NOT shoulder if possible) (look for the marbling)
kosher salt (as needed)
Pepper (fresh ground)
2 tsp onion powder
2 tsp garlic powder
1 C. plus 3-5 Tbsp All purpose flour
1-3 Tbsp vegetable oil
1 tbsp bacon grease
5 medium carrots (divided)
2 Medium large onions
3 celery ribs (divided)
3 large garlic cloves (mashed)
Rosemary (2 big sorigs)
Thyme (2 sprigs)
3 C. Chicken stock (you decide)
1 C. beef broth
1 Tbsp tomato paste
1 tsp red wine vinegar (optional)
1 C. crushed tomatoes
2 Bay leaves
1/2 tsp Kitchen bouquet (optional)

Yankee Pot Roast - Juicy Tender Full of All Beef Flavor -No Tomatoes, Potatoes, Bouquets

The Taste tells the Tale of this inexpensive cut of meat cooked to be fit for a King. Not for the Queen though, there's some garlic in that there pot! Also known as American Pot Roast, variations of this have been an American comfort food since the colonial days, adapted from English Pot Roast (a Shoulder Cut) often cooked for Sunday dinners in England.
Many American variations have added potatoes, corn, tomatoes, French bouquets, you name it....but this recipe isn't stew: it's all beef! If you put potatoes in there they will be mushy by the time the beef is done, and you don't want to open that pot up while it's cooking or you'll let all the steam escape. Use the juice in the pot to cook your vegetables after the meat is done, or enjoy the pure flavor of the roast with your favorite side dishes. You will be amazed at the depth of the roasted beefy flavor there is with so little of so few spices!
This can be cooked in the oven (traditional), slow cooker or crock pot, but it's ready in 45 minutes when cooked in an Instant Pot or Pressure cooker. It was originally cooked in a cast iron dutch oven over a wood fire in 1he 1700s, so if you've got one of those and a smoker or BBQ put it in there and you'll think you've gone to heaven. No matter how you cook it it's so tender even cowboys with no teeth can gobble it up!
I like it best with a chuck roast marbled with fat, deckel or any shoulder roast cut 2-3 inches thick, but it also comes out great with a brisket, eye round, bottom round, top round or any other tough cuts. There is a lot of shoulder meat on cattle so shoulder cuts are often available at bargain prices! Cook plenty at once, and freeze in smaller packages. Truly easy, quick (about 20 minutes of preparation), and delicious. The leftovers make the ultimate roast beef sandwiches for lunch!
4 to 5 Lbs (1.8-2.2K) Beef Chuck
50g (3 TB) Olive Oil
28g (2TB) Chopped Garlic
400g Onion
300g Carrot
Salt and Pepper to taste
200g Red Wine (1 Cup)
400-600g Beef Stock (2-3 Cups)
3g Thyme (3 sprigs) (Fresh if possible!)
3g Rosemary (3 sprigs) (Fresh if possible!)

If you are using a pressure cooker like an Instant Pot or Power Pressure Cooker XL, this is a classic pressure cooking recipe inspired by my Mom for fast, easy and yummy Yankee Pot Roast! You will be able to make this awesome family meal in 1.5 hours in an Instant Pot vs. 8 hours in a slow cooker!
2 Tablespoons of Olive Oil
1 Tablespoon Minced Garlic
3 lb Boneless Chuck Roast rubbed with Montreal Seasoning Mix
2 Yellow Onions
8 Cut Carrots
1 lb Baby Potatoes
1 Tablespoon Worcestershire
1 Tablespoon Thyme
1 Cup Ketchup
1 Cup Red Wine
2 Cups Beef Stock
Release: Natural for 10 Minutes then Quick
1/2 Cup Water
3 Tablespoons Corn Starch
Cook Time: 20 minutes for pressure and 65 minutes cook time - Do a Natural Release for 10 minutes then Quick Release. Approximately 1.5 hours total for entire recipe.
