How To make Whole Wheat Hamburger Buns
1 1/4 cups warm water (about 100F)
1/3 cup mild oil
1/4 cup sugar (or honey)
2 packages yeast (2 scant Tbsp)
4 teaspoons salt
1 egg yolk
2 1/2 cups whole wheat flour
1 cup bread flour (or all-purpose flour)
Melted butter
Combine water, oil, sugar and yeast. Mix thoroughly and then allow to rest for 15 minutes. Mix in the salt, egg yolk, whole wheat flour, and white flour and combine until thoroughly mixed (at least 10 minutes). On a floured board, roll the dough out until it is about 3/4-inch thick. cut circles of dough about 4-inch in diameter with a cutter (or use a large empty can that you have washed out).
Place the buns on a cookie sheet, brush the tops with melted butter, and allow to raise for 30 minutes.
Bake at 425F for 10 minutes or until golden brown.
YIELD: 10 buns

Ingredients:
500 g soymilk
250 g water
2 flaxeggs (2 tbsp ground flaxseed combined with 1/4 cup water or plant milk)
15 g salt
1/2 cup packed dates
1/4 cup toasted coconut butter (this is just coconut butter that I gently melted in a pot over the hob. IMPORTANT note: coconut butter easily burns, so don't nuke it in the microwave!)
2 tbsp cacao powder (optional, for color, but highly recommended)
750 g whole wheat flour
250 g all-purpose flour
15 g SAF instant yeast -
25 g of water
Soymilk for egg wash
Steps:
1. Make the flaxeggs.
2. Blend the soymilk, water, flaxeggs, salt, dates, and coconut butter in a high speed blender and blend until smooth.
3. Combine and whisk cacao powder, whole wheat flour, all-purpose flour, and yeast in a medium-sized bowl. Add wet ingredients and mix until the water is thoroughly absorbed. Add 25 g of water or more if the mixture seems too dry.
4. Knead for 10 - 15 minutes until tacky. Feel free to add some extra whole wheat or all purpose flour to this step while kneading.
5. Once tacky, add dough to a floured or greased bowl and let rise 1.5 - 2 hours until puffy and doubled.
6. On a floured surface, de-gas the dough, cut it in half, and then into 10 equal portions, approximately 200 g each, using a baking scale (-
7. Shape each dough mass into a ball, tucking the outside layers towards the center, similar to the shaping of a pita bread. Then place the dough into the palm of your hand and using your middle fingers and thumb, great tension by moving the dough towards and away from you.
8. Let all the buns rest for 15 minutes.
9. Add them to a baking tray and flatten using the palm of your hands until they look like 1/4 - 1/2 inch pancakes.
10. Let rise 30 minutes.
11. Brush with soymilk and score with a bread lame.
12. Bake at 375 F for 27 minutes, flipping the buns from bottom to top and front to back halfway through.
13. Once fully baked, transfer to wire rack to cool completely.

Ingredients
-Whole wheat aata 2 cups
-Salt 1 tsp
-Yeast 1.5 tsp
- Lukewarm Milk 1 cup
-Oil 2 tbsp
-Honey 2 tbsp
-Sesame seeds 1 tbsp
-Extra flour if needed
Direction
-Sieve 2 cups ww flour. Add salt, instant yeast and honey. Mix well.
- Add 1cup of warm milk and knead the dough into hard ball.
- Spread oil on work place and knead the dough for 10 minutes by stretch and pull method until soft and smooth dough ball is formed.
-Let the dough rest for 1 hour at warm place until double in size.
- Grease hands and divide the dough in 6 equal parts and make dough balls.
- Let the balls rest for another half an hour meanwhile preheat the oven at 180 C.
- Brush some milk and sprinkle sesame seeds on dough buns and bake for 20 minutes.
- Remove from oven, brush melted butter on top of buns.
- Cut the bun from centre and enjoy with filling of your choice.
