How To make Turkey Tamale Pie
1 x Corn Husks; Dried, *
1 x Almond Red Sauce; **
3/4 lb Turkey Breast; Cooked, ***
1 c Almonds; Toasted, Slivered
1 c Golden Raisins
1/2 c Red Bell Pepper; Chopped
4 oz Green Chile; Chopped, 1-2 Cn
TAMALE DOUGH:
2 c Corn Tortilla Mix; Instant
1/2 c Shortening
2 c Chicken Broth
2 ts Baking Powder
1/2 ts Salt
GARNISH:
1 x Sour Cream
* There should be enough corn husks to line a 10-dia. springform pan. ** See Sowest2 *** Turkey Breast should be cut into 1/2-inch cubes. Rinse corn husks and remove silk; cover husks with warm water and let stand until softened, at least 2 hours. Prepare Almond Red Sauce. Mix 1/2 cup of the sauce and the remaining ingredients except the Tamale Dough and sour cream; reserve. Prepare tamale dough; reserve. Heat oven to 350 degrees F. Drain corn husks; pat dry. Line greased springform pan, 10 X 3-inches, with corn husks, extending pointed ends of husks over the side of the pan. Spread half of the Tamale Dough over the husks on the bottom of the pan; cover with turkey mixture. Spread remaining dough over turkey mixture up to the edge of the pan. Cover the top of the pan with a piece of heavy-duty aluminum foil, 15 inches long, shaping down over the side of the pan, (The pointed ends of the corn husks will bend down against the outside of the pan). Bake until dough is set and slightly dry, about 1 1/2 hours Carefully remove the side of the pan. Serve with remaining warm Almond Red Sauce and the sour cream. TAMALE DOUGH: Beat all the ingredients in a large bowl, with an electric mixer, on low speed, scraping constantly, until well blended. Beat on medium speed for an additional minute.

Turkey Tamale Casserole
• 1 1/2 cups leftover turkey breast, skin removed
• 1 medium onion, diced
•
• ½ cup green bell pepper, diced
• 1 cup rinsed and drained canned black beans
• 1 cup corn, drained, canned or frozen (thawed if frozen), divided in half
• 1 cup tomato sauce
• 1 cup vegetable or chicken broth
• 1 tablespoon chile powder
• 1 teaspoon ground cumin
• ½ teaspoons garlic powder
• 1 teaspoons salt, plus more to taste
• ¼ teaspoon black pepper, plus more to taste
• 1 package Jiffy corn muffin mix
• 1 egg
• ⅓ cup milk
• 1 tablespoon vegetable oil
Directions:
• Preheat the oven to 425 degrees. Grease a 3-quart high-sided casserole dish with cooking spray. In a large skillet, saute the onion & green pepper over medium-high heat for 2-3 minutes. Then add the beans, half of your corn, chili powder, cumin, and garlic powder. Saute for
2-3 minutes. Add in turkey, tomato sauce, broth, salt and black pepper. Simmer for 10 minutes. Add to casserole dish. Note- the mixture will look very soup-like. This is okay! It will thicken up during the bake.
• Take the other half of your corn and roast in a pan in medium high hwat with salt & pepper to taste. No need to add oil, the corn will roast up fine on its own. Set aside to cool once roasted to golden - dark brown.
• In a medium bowl, whisk together the Jiffy corn muffin mix, roasted corn, egg, milk and oil until combined. Spoon & cover the turkey mixture with the corn bread topping. Bake until the corn bread is brown, 20 to 25 minutes. Take out to cool and wait an hour before serving.

Tamale Pie + How to Adapt a Recipe
In this video, I walk you through how I go about adapting a recipe to suit my own tastes. I took a recipe called Inside Out Turkey Tamale Pie and made it VEGAN, packed with veggies, and very flavorful. It cooks in a crockpot/slow cooker - I used my InstantPot.
My Adaptations:
1 cup broth (I like chickenless kind)
3/4 cup cornmeal
2 cans black beans, drained
1 can tomato sauce
1 green pepper, diced
1 onion, diced
1 can hominy, drained
3 TBSP chili powder
1 Tsp onion powder
1 Tsp garlic powder
2 Tsp cumin
1 Tsp salt
2 TBSP food glitter aka nutritional yeast
Mix cornmeal into broth and let sit while doing everything else.
Add all ingredients to slow cooker and stir. Taste and adjust.
Add cornmeal mixture and stir again.
Cook on low for 7-8 hours or high for 3-4.
