How To make Trinidadian Sugar Cakes
4 c Grated coconut
1 c Water
1 c Sugar
1/2 Tea cream of tarta
-r 1 Tea almond essence
Few drops of food colouring --- * see note Recipe by: Nicole Farmer <N.Farmer@CAR0201.WINS.ICL.CO.UK> * (Very few! Otherwise you'll have flourescent!) 1. Boil sugar and water to form a light syrup.
2. When bubbles the size of small pearls appear, add grated cocunut and
cream of tartar. 3. When the cocunut mixture comes away from the sides of the pan easily,
remove from heat and beat with a spoon for 3-5 minutes. 4. Add essence and food colouring and mix well.
5. Drop by spoonfuls on an oiled cookie or enamel tray.
6. Allow to harden completely.
7. Store in an airtight container.
Tip: You can divide the mixture into batches before Step 4 and add a different color to each batch. It looks really pretty in a glass cookie jar after its finished. In spite of the high sugar content, this is a really popular snack with parents for the kids. It's quick & easy. There aren't any preservatives. What you see is what you get. You have to like coconut, though. -----

Putting the coconut sugar cake on a banana leaf to set is a custom in the Caribbean. Also, you can leave them to set in a greased baking pan or dish, or on a greased wax paper.
Make sure there are no liquid remaining in the coconut sugar cake. It will not set.
Add more sugar if your coconut is not forming or holding together.
Recipe
2 cups of water
3 cups of grated coconut (use the larger shredding holes on the grater)
3 cups of brown sugar (use 2.5 cups of sugar if you prefer. If it is not coming together, add 1/2 cup or more)
3 bay leaves
3 tablespoons of grated ginger(more or less if you prefer)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract

RECIPE
1 cup of water
2 1/2 cups of roasted peanuts
2 1/2 cups of granulated sugar
3 tablespoons grated/minced ginger(add more or less if desired)
2 Cinnamon stick or 1/2 teaspoon of cinnamon powder
1 Teaspoon vanilla extract/ vanilla essence
*GREASE WAX PAPER BEFORE PLACING GROUND NUT SUGAR CAKE TO PREVENT STICKING.

Guyanese/Trini Sugar Cake || Jamaican Grater Cake - Episode 38
I've brought you guys yet another coconut recipe. Coconut is so versatile, being used in a multitude of Guyanese desserts and savory dishes. These sugar cakes are very popular in Guyana, but they are also made widely throughout Trinidad, and they are known as Grater Cakes in Jamaica. These are a perfect dessert, and the nutmeg and ginger make them delectable.
Ingredients and Measurements:
6 cups grated coconut
2 cups granulated sugar
3 tsp. grated nutmeg
2 tsp. ground (or fresh) ginger
a pinch of salt
2 (12 oz.) cans of evaporated milk
1-2 tsp. of red food coloring (I like the powdered version)

TOBAGO SUGAR CAKE RECIPE
INGREDIENTS:
3cups- Coconut (grated/shredded)
3cups- Granulated sugar/castor sugar
1cup- Sweetened condensed milk
3cups- Water
1/4tsp- Almond essence
4drops- Vanilla extract
4drops- Pina colada extract
4drops- Orange bitters
1pinch salt( Optional)
METHOD:
STEP1: Steam the coconut in boiling water.
STEP2: Add the half of the sugar and let simmer until the liquid reduces to quater.
STEP3:Add the balance of the sugar and the other ingredients. Let it thicken and begin to Crystallize, where there is no more visible liquid in the pot,make sure you're doing regular stirring to prevent the mixture from burning then turn the stove off. Please do this on medium-low heat.
STEP4:In a greased dish or plate scoop the mixture onto it and let it set for a hour.
STEP5: Serve and eat.
