How To make Tomatoes Parmesan
4 lg Ripe tomatoes
1/4 c Butter or margarine
1/2 c Grated Parmesan cheese
1/4 c Finely chopped parsley
1 T Dried oregano leaves
1. Wash tomatoes and pat dry. Cut tomatoes in half crosswise.
Place cut-side-up in a shallow, heat-resistant, non-metallic, baking dish. 2. Dot each tomato half with about 1/2 tablespoon butter.
3. In a small bowl, combine remaining ingredients. Top each
tomato half with some of the cheese mixture. Heat, uncovered, in Microwave Oven 5 to 6 minutes, or until tomatoes are soft and topping begins to melt. Do not overcook as tomatoes will become too soft. Serves 4 to 8 Variation: If desired, dry seasoned bread crumbs may be substituted for all or part of the Parmesan cheese.

INGREDIENTS
1 pound pasta
Kosher salt
½ cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
½ teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)
PREPARATION
Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
Meanwhile, heat oil in a 12 skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6–8 minutes.
Toss pasta with tomato sauce and basil. Top with Parmesan.

INGREDIENTS:
2 large tomatoes cut into 3 slices each
½ cup Parmesan cheese grated
1 tsp oregano dried
¼ tsp salt or to taste
¼ tsp pepper or to taste
1 Tbsp olive oil for drizzling over the top
Parsley chopped, for garnish
DIRECTIONS:
1. PREHEAT the air fryer to 380°F.
2. TOSS together the Parmesan cheese, dried oregano, salt and pepper in a small bowl.
3. TOP each tomato slice evenly with the Parmesan cheese mixture. Drizzle with a bit of olive oil, this is optional.
4. COOK until the Parmesan cheese is slightly browned and melted, about 10-15 minutes.
5. GARNISH with parsley and serve immediately.

My Tomato Basil Parmesan Soup is rich, creamy and full of flavor. I hope you enjoy the recipe!
Jen's Tomato Basil Parmesan Soup
2 Tablespoons olive oil, divided
1 small onion, diced
4 cloves garlic, minced
28 ounce can tomatoes, drained (you can use fresh tomatoes, if you prefer)
2 cups vegetable or chicken broth
1 teaspoon dried basil
1 teaspoon salt
1/3 cup Parmesan cheese
2 Tablespoons butter
1/2 cup half & half
Heat a large pot over medium high heat. Add 1 Tablespoon olive oil. Saute chopped onion for 3 minutes or until tender. Add minced garlic and saute for 1 minute longer. Add 1 more Tablespoon olive oil and drained tomatoes. Saute for 3-4 minutes longer.
Remove pot from heat and let tomato mixture cool slightly. Add mixture to food processer and process until smooth.
Add chicken broth to pot and cook over medium high heat. Add tomato mixture to the pot. Add basil, salt and pepper. Bring to a boil. Reduce heat to medium. Add butter and mix until melted. Stir in half & half. Lastly, stir in parmesan cheese. Taste and adjust seasonings, if needed. Simmer and stir occasionally for 30 minutes.
Yield: 4 servings
