How To make Tijuana Pie
1 1/2 lb Ground beef
1 Medium onion, chopped
2 Cloves garlic, minced
1/4 lb Cheddar cheese, grated
1 10-oz can enchilada sauce
1 8-oz can tomato sauce
2 16-oz cans chili beans
1 16-oz can corn, drained
1 6-oz can sliced black olives
6 Corn tortillas
Brown ground beef together with chopped onion and minced garlic. Drain and reserve.
In a lightly oiled crockpot, layer the ingredients in this fashion: 1 tortilla/meat/sauce/cheese/1 tortilla/beans/cheese/corn/1 tortilla/repeat the layers. Turn crockpot on LOW for 5 to 7 hours.
More frequently, this recipe can be made as a 'lasagna', doubling the quantities, and layering in a 9 X 13 casserole. Then the casserole can be baked (covered with foil) for 2 hours at 325 degrees F. From: Richard Douville Date: 03-29 Cooking *

Staying in Roma Norte Mexico City, on our last day, I just decided to walk around the neighborhood and eat at some of the stalls that I had been seeing that looked the best.
Here’s all the Mexican street food that I ate in this tour. You can see more details and a map about how to get to each place on my Mexico City street food guide:

It was an amazing day walking around and eating in Roma Norte, Mexico City. It’s hard to pick a favorite dish because the food was all so good, but definitely the blue corn tlayuda and the seafood tostadas were the best of the best.

Award Winning Pickled Eggs - Kansas 2 time winner
My Award winning pickled eggs are easy to make and super yummy with beer. I won Blue ribbons 2 different years for my eggs and Jerky...Yep...Local county fair. Also don't forget the 1/2 fresh squeezed lime per quart. Forgot in video but it's in the description. The Lime takes these eggs to the MOON. Ready to eat in 24 hours and by 48 hours.
The 4 day thing is for the Unwashed Farm Fresh eggs we use. Eggs straight from a chicken are hard to peel so they need to sit a few days so the egg's sulphur can soften the shell a bit. Store bought eggs can be used immediately and should be kept cold. Unwashed Farm Fresh eggs have a natural bloom coating allowing them to be stored at room temperature for weeks.
This recipe is NOT meant for long term storage like traditional canning methods. Store them a couple days at room temp...or put them in the refrigerator for a week or so. Still tastes good...just a little rubbery.
My eggs are great beer snacks food that make horrible farts with good hang time. Perfect for the car! In our house a quart doesn't last two days. Our downtown pool hall has a 2 gallon jar of pickled eggs on the counter and I know for a fact they are 6 Months Old. They got that Jar in December and it's now May 12 with a couple dozen remaining to sell. The pool hall eggs sit at the bottom in cloudy flat vinegar right next to the Jars of Turkey Gizzards and Pigs Feet. All sitting on the counter NOT refrigerated. Those Three delicacies are self service with metal tongs hanging on a hook.
We Midwest folks (including Texas) love our traditional Cowboy food. We fight over who's first in line at our Lions Club Mountain Oyster feast. All you can Eat $12 with Pig and Cow testicales served with hot pickles and white bread.

Let me tell you my favorite hot dogs are the ones that are topped with a lot of topping and let’s not forget with a lot of onion ???????? Sonoran hot dogs here in Arizona are soooo popular but tbh I’m very picky with the winnie (hot dog frank) For my liking it has to be 100 percent beef! Bolillo bread or your favorite hot dog buns
Your choice of bacon
Sour cream(optional) or mayo
Mustard( optional) I loooove mustard!
Chopped onion
Chopped tomatoes
Yellow jalapeños
Sliced onions
Frijoles de la olla
Salsa verde:
3 tomatillos or you can substitute for lime juice
Jalapeños I used 3
Piece of onion (1/4 small onion)
1 garlic clove
3 tbsp water
Salt I used 1 tsp
