How To make Thumbprint Cookies Part 1
1 c Butter or margarine;
-softened 2/3 c Sugar
2 Egg yolks
1/2 ts Vanilla extract
2 1/4 c All-purpose flour
1/4 ts Salt

Cream butter; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in vanilla. Combine flour and salt; add to creamed mixture, mixing well. Chill dough at least 1 hour. Shape dough into 1-inch balls; place about 2 inches apart on ungreased cookie sheets. Press thumb in each cookie leaving an indention. Bake at 300 degrees for 20 to 25 minutes; do not brown. Cool on wire racks. Spoon about 1/2 teaspoon Chocolate Frosting or Powdered Sugar Glaze in each cookie indention. Recipe continues on Thumbprint Cookies-Part 2. -----

Ingredients :
For the cookie dough :
200g (1/2 cup + 6 tbsp) salted butter (soften)
64g (1/2 cup) icing sugar
1 egg yolk (optional)
1 tsp (5ml/5g) vanilla essence
250g (2 cups) all purpose flour
43g (1/3 cup) corn flour
For the filling:
a) Jam Thumbprint Cookies
125g jam (any flavour)
b) Pastel Thumbprint Cookies
125g white chocolate
Any food colouring

Method:
For the cookie dough :
1. Add the butter and icing sugar to a bowl. Soften the mixture.
2. Add a egg yolk and vanilla essence to the mixture.
3. Sift all purpose flour and corn flour to the mixture.
4. Mix well till combined.
5. Shape the dough into a ball (1/2 tbsp each dough)
6. Use your thumb to make a well on the dough (not too deep)
For:
a) Jam Thumbprint Cookies
1. Add any jam filling to the cookie.
2. Bake the cookie at 140°C for 10-12 minutes
3. Done.
b) Pastel Thumbprint Cookies
1. Bake the empty Thumbprint cookie dough at 140°C for 10-12 minutes.
2. Melt the white chocolate
3. Divide the melted chocolate and add any food colouring.
4. Fill the baked Thumbprint Cookies with the coloured melted chocolate.
5. Let the chocolate set.
6. Done.

Makes 24 cookies
Ingredients:
1 Egg
1 egg yolk
3/4 cup (150g) Sugar
1/2 cup + 1 tbsp (135ml) Oil
1 teaspoon Vanilla extract
2 cups (250g) Flour
1 teaspoon Baking powder
1/4 teaspoon Salt
1 Egg white
100g Crushed hazelnuts, roasted
100g Dark chocolate/ milk chocolate
Directions:
1. Preheat oven to 160C (320F). Line 2 baking tray with parchment paper and set aside.
2. In a large bowl place 1 egg, 1 egg yolk and sugar, whisk until light and pale.
3. Add oil, vanilla extract and whisk until combined.
4. Add flour, baking powder, salt, and stir until dough is formed.
5. Shape small balls, dip each ball in the egg white, then cover with chopped hazelnuts. Arrange the balls on prepared baking tray. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball.
6. Bake for 14-15 minutes, or until golden.
7. Chop the chocolate, place in a heatproof bowl and melt in the microwave in 30 seconds intervals until melted.
8. Fill each cookie with melted chocolate and allow to cool.
