How To make Tex Mex Turkey Casserole
2 ts Vegetable oil
1 Onion, chopped
1 Garlic clove, minced
2 ts Chili powder
1 ts Cumin
1/2 ts Dried oregano
1/2 ts Salt
pn Hot pepper flakes pn Pepper 28 oz Can tomatoes, undrained
2 c Corn kernels
1 Sweet red/green pepper, chop
1/4 c Fresh parsley, chopped
40 Tortilla chips - unsalted
2 c Turkey, cooked, cubed
1 1/2 c Monterey jack cheese, shred
- or cheddar cheese In large skillet, heat oil over medium heat; cook onion and garlic for 3 minutes or until softened. Stir in chili powder, cumin, oregano, salt, hot pepper flakes and pepper; cook for 1 minute. Add tomatoes; crush with potato masher. Bring to boil; reduce heat and simmer for 20-30 minutes or until most of liquid has evaporated, In bowl, combine corn, sweet pepper and parsley. Place one-third of tortilla chips in greased 8-inch square baking dish (2 litre). top with half the turkey, corn mixture and tomato sauce, and 1/2 cup of the cheese. Repeat layers of tortilla chips, turkey, corn mixture, tomato sauce and remaining cheese. Crush remaining tortilla chips; set aside. Bake, uncovered, in 350F(180C) oven for 20 minutes. Uncover and sprinkle with remaining chips. Bake for 10 minutes longer or until heated through.

RECIPE: Tricia's Tex Mex Poblano Turkey Cornbread Casserole with Jalapeno Cranberry Topping
Ingredients:
1 breast of turkey
1 box cornbread stuffing
2 poblano peppers
6 green tomatillos
1/2 onion
2 garlic cloves
1/2 cup chicken broth
1 can cream of poblano or chicken
4 cups water
salt pepper cumin
melty mexican cheese (oaxaca or monterrey) or mozarella. shredded
1/2 jalapeno chopped
6 oz fresh cranberries
1/2 cup sugar
1/2 cup water
2 small green onions chopped
Instructions:
Bake breast of turkey in 375 degrees F oven approximately 45 minutes or till done.
Shred turkey meat removing skin and bones. Roast poblano peppers in skillet till
skin is blackened. Remove and place in plastic bag or wrap and keep tight to form
steam for about 5 minutes. The skin can then be removed with spoon. Slice open
the poblano and remove veins and seeds then slice it up or chop. In a big pot add
about 4 cups water boil the green tomatoes, jalapeno, and 1/4 of onion. chop remainder
of onion. Remove the softened tomatillos, jalapeno, and onion and put in blender
adding garlic cloves and a bit of boil water. add salt, cumin, and pepper to taste. Prepare stuffing as
directed on box or package. In a bowl mix the poblano cream with chicken broth.
In a 9x11 inch bake pan first layer the stuffing about 1/3 on bottom of pan. layer some
of the shredded turkey and season as desired. Add a layer of the poblano slices or pieces
then chopped onion. Add some of the cream and broth mix over and a bit of the green salsa
add some cheese and repeat all steps till you have 2 or 3 layers. make sure to top off
the last with green salsa, cheese, and chopped green onion (you may choose not to bake
the green onions on top and just top when it is out of oven and ready to serve.
Bake in preheated oven at 375 degrees F for about 15 minutes or till bubbly and cheese
is melted. Remove from oven and allow to rest while you make the jalapeno cranberry.
In a small pot add water, cranberries and sugar. Stir till sugar begins to melt. cut up the
jalapeno removing seeds and veins if desired. chop finely and add to cranberries and
sugar. Boil till the cranberries pop and can be crushed. This is your topping.
Serve casserole on plate and drizzle the cranberry topping over and enjoy!

STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
