How to Set Your Drinks on Fire
Get Your Fire Extinguisher Ready! This Episode of Spike's Breezeway Cocktail Hour is lit (yeah, sorry for even writing that)! Join us as we light up the room (and your taste buds) with the art of Tiki cocktails and fire. We'll show you how to use different fuels to set your drinks ablaze and make 3 vintage cocktails that will make your taste buds dance. Watch us whip up the Sidewinder's Fang, a fiery Scorpion Bowl, and the Kona Coffee Grog from Mai Kai. It's time to turn up the heat and impress your guests with your Tiki cocktail skills!

To make the Cobra's Fang:
--------------------------------------
1/2 oz fresh lime juice
1/2 oz fresh orange juice
1/2 oz Passion Fruit Syrup
1/4 oz Falernum
1½ oz 151-proof Demerara Rum
1 dash Angostura Bitters
6 drops Absinthe
--------------------------------------
Blend for 5 seconds and pour everything into a glass. Decorate with a cinnamon stick.
To make the Scorpion Bowl:
--------------------------------------
6 oz fresh orange juice
4 oz fresh lemon juice
1½ oz orgeat Syrup
6 oz light rum
1 oz brandy

Blend everything for about 10 seconds. Pour unstrained into a vintage tiki bowl.
To make the Kona Coffee Grog:
--------------------------------------
2 cups hot Kona coffee
3 teaspoons honey cream mix (1 part butter to 1 part honey)
1/2 teaspoon cinnamon
1 ounce dark Jamaican rum
1 ounce 151 dDemerara rum
6 strips of lemon peel
6 strips of orange peel

In a heat-proof pitcher, combine the rum, cinnamon and citrus peels. Stir, set aside and let the rum soak into the peels.
Into a small pan, pour the hot Kona coffee and add the honey mix. Slowly heat. Pour heated (but not boiling) mixture into a coffee grog mug. Take the pitcher and coffee mug to a serving table.
With chopsticks, remove a piece of the orange or lemon peel and set afire. Plunge the peel back into the pitcher, setting the rum mixture ablaze (see photos below).
If possible, pick up the flaming citrus peel pieces and drop them into the coffee grog mug. Pour the flaming rum into the glass, stir with chopsticks and serve. The Mai-Kai adds a cinnamon stick, which is a nice touch.

Rose Syrup:
Rose petal 1.5g
Sugar 100g
Water (1) 145ml
Rose Lemonade:
Rose syrup 100ml
Lemon juice 140ml
Water (2) 460ml
Rose Syrup:
1. Combined rose petal, sugar & water (1) in a pan, cook over medium heat until it starts to simmer, turn to low heat and simmer for 10 – 12 minutes.
2. Strain the rose syrup, let it cool down.
Rose Lemonade:
1. Juice 2-3 lemons.
2. Add rose syrup to a jar.
3. Add lemon juice to rose syrup.
4. Add water (2).
5. Refrigerate.
Sparkling Lychee & Rose Cooler – Single serving (Cup capacity: 160ml)
Lychee juice 20ml
Rose lemonade 35ml
Lychee flavored soda 30ml
Rose petal ice cubes
Decoration:
Lychee
Thyme
1. Make some rose petal ice cubes.
2. Crush lychee with a muddler, strain and pour lychee juice into the glass.
3. Add ice cubes.
4. Add lychee flavored soda.
5. Fill it up with Rose lemonade.
6. Decorate with lychee and thyme.
玫瑰荔枝柠檬气泡特调
玫瑰糖浆:
玫瑰干花瓣 1.5g
细砂糖 100g
清水 (1) 145ml
玫瑰柠檬水:
玫瑰糖浆 100ml
柠檬汁 140ml
清水 (2) 460ml
玫瑰糖浆:
1. 玫瑰干花瓣,细砂糖和清水加入锅中,中火煮开后转小火熬10-12分钟。
2. 过筛,冷却备用。
玫瑰柠檬水:
1. 新鲜柠檬榨汁。
2. 容器里加入玫瑰糖浆。
3. 加入柠檬汁。
4. 最后加清水。
5. 冷藏备用。
玫瑰荔枝柠檬气泡特调 – 一人份 (杯容量: 160ml)
荔枝汁 20ml
玫瑰柠檬水 35ml
荔枝气泡水 30ml
玫瑰花瓣冰块
装饰:
荔枝
百里香
1. .提前制作玫瑰花瓣冰块。
2. 荔枝捣成汁,倒入杯中。
3. 加满冰块。
4. 倒入荔枝气泡水。
5. 加满玫瑰柠檬水。
6. 用荔枝和百里香装饰。

Lychee & Rose Cold Brew - Single serving (Cup capacity:470ml)
Lychee Grass Jelly:
Lychee 200g
Water (1) 50ml
Water (2) 200ml
Granulated sugar 12g
Grass jelly powder 20g
Lychee grass jelly 100g
Rose syrup 15ml
Lychee flavored soda 100ml
Cold brew coffee 35ml
Rose petal Ice cubes
Decoration:
Lychee grass jelly
Rosemary
Cold Brew Coffee:
1. Cold brew some coffee a day in advance (Coffee to water ratio – 1:4)
Lychee Grass Jelly:
1. Blend lychee with water (1), strain lychee juice into a saucepan.
2. Add water (2) and sugar to lychee juice, cook under medium heat until sugar melted, add grass jelly powder, stir well and bring it to a boil, stir until grass jelly powder melted.
3. Remove from heat and pour it into sphere ice cubes maker.
4. Refrigerate for 2 hours.
Lychee & Rose Cold Brew:
1. Add lychee grass jelly into the glass, fill it up with ice cubes.
2. Add a sprig of fresh rosemary.
3. Add lychee flavored soda to seven full.
4. Add cold brew coffee to nine full.
5. Decorate with lychee grass jelly.
玫瑰荔枝气泡冰咖啡 - 一人份 (杯容量470ml)
荔枝凉粉冻:
荔枝 200g
清水 (1) 50ml
清水 (2) 200ml
细砂糖 12g
白凉粉 20g
荔枝凉粉冻 100g
玫瑰糖浆 15ml
荔枝气泡水 100ml
冷萃咖啡 35ml
玫瑰花瓣冰块
装饰:
荔枝凉粉冻
迷迭香
冷萃咖啡:
1. 提前一天准备冷萃咖啡 (咖啡和水比例 – 1:4)。
荔枝凉粉冻:
1. 荔枝加清水(1),用搅拌机打成汁,过筛倒入锅中。
2. 加入清水(2)和细砂糖,中火煮至糖融化,加入白凉粉,搅拌均匀,煮开后离火。
3. 倒入圆球冰格里制成果冻。
4. 冷藏两小时。
玫瑰荔枝气泡冰咖啡:
1. 杯中加入荔枝凉粉冻,加满冰块。
2. 放入一根迷迭香。
3. 倒入荔枝气泡水至7分满。
4. 倒入咖啡液汁9分满。
5. 用荔枝凉粉冻装饰。
