6 sl Bacon
1 lb Ground beef
1 c Whole kernel corn
1/4 c Chopped green chiles
3 Green onions w/tops, chopped
1/4 c Cornmeal
1/4 ts Oregano
1 ts Chili powder (or more)
1 ts Salt
Freshly ground black pepper 1/4 ts Cumin, ground
1 cn Tomato sauce (8 oz. can)
1 Cornmeal Pie crust (see #80)
1 Egg
1/4 c Evaporated milk
1/2 ts Dry mustard
2 c Jack cheese, grated
4 Stuffed olives, sliced
Fry bacon until crisp; break into lge. pcs. Set aside. Chill bacon drippings until firm for use in crust. Brown ground beef in large skillet; drain off fat. Stir in next 10 ingreds. Prepare the piecrust, and use it to line a 9" pie pan. Place meat mixture in the pan. Bake at 425 F. for 25 min. Mean while, combine egg, evapporated milk, mustard and cheese. Spread on top of the pie and decorate with the reserved bacon pcs. and the sliced olives. Bake for 5 min. longer, or until cheese melts. Let stand for 10 min., or until firm, before serving. -----

TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE
Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13 baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

How to Make a Tamale Pie with Masa Harina | The Frugal Chef
This tamale pie recipe is a delicious Tex-Mex casserole made with beef and a beautiful masa harina crust. Masa harina is very finely ground corn flour which has been dried. It is also used to make corn tortillas and tamales. You can find it in Hispanic grocery stores or, perhaps, in the Mexican aisle of your grocery store.
You can use fine cornmeal instead of the masa harina if you would prefer or can not find it. That will work perfectly fine, although the flavor might be slightly different.
If you are not a big beef eater you can certainly make this tamale pie with chicken. Simply cube it finely.

Serves eight
1 pound ground beef
2 TBS olive oil
1 large white onion – finely chopped
4 garlic cloves – minced
2 chipotle peppers in adobo – finely chopped
1 small green bell pepper – finely chopped
3 tomatoes – peeled and chopped
1 cup yellow corn kernels
1 cup tomato sauce
½ cup water
1 TBS ground cumin
1 TBS oregano
1 tsp. salt
1 tsp. black pepper
Heat some oil in a skillet and brown the beef. Drain it in a metal colander inside a bowl.
Wipe down the skillet and add more oil. Add the onion and cook for about 8 minutes – until soft, translucent and starting to brown. Add the garlic and chipotle and cook for a couple of minutes until fragrant.
Add the bell pepper and tomatoes. Stew the tomatoes for about 5 minutes. Return the beef to the skillet and add the corn. Add the tomato sauce and water. Mix. Add the cumin, oregano, salt and pepper. Mix well. Bring to a simmer and cook for about 15 to 20 minutes.
Remove cooked meat from skillet and place in a casserole dish.
Heat the oven to 350 degrees.
FOR THE TOPPING:
4 cups of water
1 tsp. salt
1 tsp. chili powder
1 ¼ cups masa harina or fine cornmeal
1 large egg
½ cup sour cream
½ cup shredded Cheddar cheese (optional)
Place the water in a pot – preferably a heavy one. Add the salt and chili powder. Mix. Slowly add the masa harina – whisking well every time. Cook for about 4 minutes until it resembles a thick batter.
Lightly beat the egg. Add the sour cream and whisk well. Slowly incorporate 1 cup of the hot masa harina in order to temper the egg. Mix well and pour into the pot with the remaining masa. Add cheese if using.
Pour the mixture on top of the meat. Place the casserole dish into the oven and bake for about 40 to 45 minutes – until meat is bubbly and masa is completely cooked through.
Remove from oven and allow sitting for about 10 minutes. Serve and enjoy!

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked

HOW TO MAKE TAMALE PIE - Chicken Tamale Pie Recipe
Hello All, I am back with my first recipe of the year. Tamale Pie! This is a delicious comfort food casserole. You can use the meat filling of your choice! You can also go vegetarian and use a saute of your favorite veggies. This recipe easily serves 6 to 9 single servings. I hope you enjoy the video!
INGREDIENTS
2 lb rotisserie chicken (shredded)
8 oz block cheddar cheese (shredded)
ENCHILADA SAUCE
1 1/2 tbls chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground cumin
3 tbls flour
1 tomato flavored chicken buillion cube
1/4 cup oil
2 cups water
CORNBREAD
2 cups yellow corn meal
1 1/2 cups all purpose flour
2 large eggs
1 tbls baking powder
2 tsp sea salt (use less if using table salt)
3 tbls sugar
1/4 cup oil
2 1/2 cups whole milk
**You can also just use 2 boxes of jiffy cornbread mix
**Preheat oven to 400 degrees Fahrenheit
**Bake Casserole for 22 - 25 minutes
