ground beef, lean

peppers, medium green and/or red sweet, seeded and chopped
11
ounces
condensed nacho cheese sauce, one can
4 1/2
ounces
olives, ripe pitted and sliced
8
ounces
salsa, chunky mild or 3/4 cup
1/4
cup
water
2
each
corn muffin mix, 8 ounce packages
3/4
cup
shredded colby cheese (3 oz)
1
cherry tomatoes, quartered (optional to taste)
1
whole pitted ripe olives (optional to taste)
1
each
onion, medium chopped
Directions:
In a 12-inch skillet cook ground beef, peppers, and onion till meat is brown. Drain off fat.
Stir in soup, sliced olives, salsa, and water. Bring to a boil and reduce heat.
Simmer, uncovered, for 5 min. Remove from heat.
Meanwhile, prepare corn muffin mix according to package directions.
Spread half of the muffin batter into a greased 13x9x2-inch baking dish. Spoon the hot meat mixture over the muffin layer.
Carefully spread the remaining corn muffin batter over the meat mixture.
Bake in a 350 degree oven for 30-35 min. or until muffin layer is golden.
Top with cheese. If desired, garnish with tomatoes and whole olives.
Cut into squares and serve.

1 envelope of taco seasoning
10.5 oz can condensed cream of chicken soup
can of Rotel
8 oz softened cream cheese
2 boxes Jiffy cornbread mix
2 large eggs
3/4 cup of milk
12 oz cheddar cheese
bake in an 8x12-inch baking dish

1930's Canadian Tamale Pie Recipe. Welcome Friends! Today on the Old Cookbook Show, we are going to make a 1930's Depression era Canadian version of a Tamale Pie Recipe. Tamale Pie probably wasn't something that a lot of Canadians were eating in the 1930's - so this Tamale Pie Recipe was a bit of an exotic anomaly in this cookbook.
Ingredients:
1½ cups cornmeal
1½ tsp salt
2 cups cold water
4 cups boiling water
1 ounce suet
1 onion, chopped
1 pound ground beef or pork
1 cup canned tomatoes
Salt and pepper to taste
Cayenne pepper to taste
Method:
Preheat oven to 350ºF
Mix cornmeal, salt, and cold water; add boiling water.
Stir well and cook in a double boiler for 1 hour.
Render suet, and cook onion until it browns.
Then add meat and brown it, add tomatoes and cook 5 minutes.
Add salt, pepper and cayenne to taste.
In a greased casserole, add an inch layer of cornmeal.
Add the meat in a layer, and then a final layer of cornmeal.
Cover and bake for 45 minutes.
Remove cover and brown.

Chicken Tamale Pie | Delish
A layer of cornbread topped with cheesy shredded chicken = DINNER GOALS.
DIRECTIONS
1. Preheat oven to 400º. Prepare cornbread base: In a medium bowl, combine corn muffin mix, sour cream, corn and egg. Whisk until evenly combined. Spray a large oven-safe skillet with cooking spray. Pour into a large cast iron skillet and bake until golden, 15 minutes. Let cool slightly.
2. Meanwhile, in a large skillet over medium heat, heat oil. Add onions and cook until tender, 5 minutes, then add garlic and cook 1 minute more. Add taco seasoning and season with salt. Add chicken and 1/2 cup enchilada sauce and stir until combined.
3. Poke holes all over cornbread with the bottom of a wooden spoon. Pour remaining 1/4 cup enchilada sauce over poke holes and top with chicken mixture.
4. Top with cheddar and Monterey jack and bake 20 minutes more.
5. Garnish with cilantro and serve.

Chopped fresh cilantro, for garnish
