Pepparkakor - Swedish ginger thins
Pepparkakor are delicious sweet, crisp and spiced Swedish gingerbread cookies, sometimes called ginger thins. They're easy to make, though you can take a little more time decorating them with icing, if you like. They're delicious any time, but are especially popular as a Christmas cookie. Once you take a bite, you'll soon see why.

How to make Swedish gingerbread called, “pepparkakor”!
In this video my daughter and I make Swedish gingerbread dough from scratch. Her brother and sister also help her bake gingerbread biscuits.

The recipe!
Ingredients
250 ml dark brown sugar
75 ml golden syrup Lyle's Golden syrup:
75 ml cold water
150g butter
1 tbsp ground cinnamon
1 tbsp ground ginger
1 tsp ground clove
600 ml flour
1.5 tsp baking soda
Step one:
Add dark brown sugar, golden syrup and cold water to a pan.
Step two:
Bring to a boil.
Step three:
Add butter and stir until it has completely melted
Step four:
Add cinnamon, ginger and clove. Do NOT mix spices once added
Step five:
Let the mixture cool down (can be put in the fridge)
Step six:
Mix flour and baking soda together
Step seven:
Add flour mixture and mix into a dough
Step eight:
Wrap dough in food wrap (cling film).
Step nine:
Leave in the fridge overnight
Step ten:
Put on the oven 350 F (175C) degrees
Step eleven:
Put a little bit of flour on the table and then roll out the dough. Make biscuits using cookie cutters.
Step twelve:
Bake in the oven for 6-10 minutes
Latvian Pepper Cookies Recipe - Very Easy! - Piparkukas Recepte
Every Christmas homes all around Latvia and indeed the Baltics and Scandinavia make pepper cookies ready for the festive season. They are so easy and fun to make, every one can join in around the table and make it a great family time together.
It's important to remember that pepper cookies are not gingerbread at all despite them often being translated this way. Many recipes like ours don't even include ginger!
Recipe:
330g Butter
100g Dark sugar
100g Dark honey
200g white sugar (or light brown sugar)
900g All purpose flour (adjust when kneeding to suit)
2 teaspoons of baking soda
Spice Mix:
2 tsp ground cinnamon
2 tsp ground cloves (leave out if you don't like)
2 tsp ground cardamons
2 tsp ground coriander
2 tsp ground black pepper
Optional extra spices:
Ground ginger
Ground allspice
Christmas in latvian is called Ziemassvētki and is also celebrated by people whose religious belief is not Christianity. Nowadays the customary Ziemassvētki traditions are decorating the Ziemassvētku egle (Christmas tree), Ziemassvētku vecītis (Santa Claus, lit. Old Christmas Man), baking piparkūkas and mandarin scent.
In 2018 we left the UK to come to Gita’s family homestead here in north Latvia, not far from the Estonian border and now we live somewhere nowhere in the middle of a forest in a house built by Gita’s grandfather. How To Make Swedish Spice Cookies ????Kryddkakor
Swedish Spice Cookies is one of the Seven Kind of Cookies Sju sorters kakor for your cookie tray. These typical Swedish cookies are easy to make ginger spice cookie. Each cookie has both a light crisp exterior and a soft chewy center. ☕
Ingredients
2 1/4 cup of flour
2 teaspoons of baking soda
1 teaspoon of ground ginger
1 teaspoon of ground cloves
1 teaspoon of ground cinnamon
1 teaspoon of salt
3/4 cup of softened butter
1 cup of sugar
1 egg
1/4 cup of molasses
Preheat oven to 375°F.
Arrange cookies 2 inches apart on ungreased baking sheet.
Bake until set, 9-10 minutes.

Recipe & Preparation for 4 People
Gathering the Winter Flavors:
We start with 3 cups of flour, the snowy foundation of our Pepparkakor.
1 cup of sugar, to sweeten our winter days.
100g of butter, to add richness and warmth.
4 tablespoons of golden syrup, the liquid gold of Swedish baking.
1 tablespoon of ground ginger, 1 teaspoon of ground cinnamon, and a pinch each of ground cloves and cardamom, a melody of spices to dance on your palate.
1 teaspoon of baking soda, to bring a lightness to our cookies.
And a dash of love, the secret ingredient in every family recipe.
