OLD SCHOOL HEARTY CHILI WITH BEANS (SUPER BOWL MENU ITEM)
This is a must have at every event at my home
Its very filling and delicious
Ingredients
2 tablespoons vegetable oil
1 large yellow onion, diced
2 medium bell peppers (green and red), diced
5 cloves garlic, chopped
1½ pounds lean ground beef
¼ cup chili powder
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 (6-ounce) can tomato paste
1 (28-ounce) can diced tomatoes
1 (14½-ounce) can fire roasted diced tomatoes(rotel)
(16 oz ounce beef stock
1 (15-ounce) cans kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
shredded cheddar cheese, for serving (optional)
sour cream, for serving (optional)
chopped green onions, for serving (optional)
Directions
Heat the oil in a large Dutch oven over medium-high heat. Once the oil is hot, add the onion, peppers, and sauté until soft, about 4 minutes. Add the garlic and sauté for 1 to 2 minutes, just until fragrant. Stir in the beef, breaking it up with the back of your wooden spoon, and cook until browned, about 5 minutes.
Stir in the chili powder, cumin, and cayenne and sauté for about 2 minutes more. Stir the tomato paste into the beef; this will intensify the flavor. Add both cans of diced tomatoes with their juices, the beef stock and all the beans, stirring to combine.
Bring the chili to a boil, then reduce to a simmer, cover with a lid, and cook on medium-low for a good 2 hours, stirring on occasion to keep the chili from sticking to the bottom of the pan.
Cook’s Note: One of the best things about making a big pot of chili is that you can freeze the leftovers. All the flavors will continue to marry together so it’ll be even better when you reheat it.

Here is the recipe:
Ingredients:
1 pound of ground sirloin
1 pound of jimmy dean sausage
1 large onion chopped
1 16 oz bag of Mexican cheese
3 cans of black beans
2 cans of pinto beans
1 can of corn
2 jars of salsa (mild)
1/2 tsp of red pepper flakes (optional)
1 can of crushed tomatoes
1 tsp of tomato paste
1 tsp of minced garlic
pinch of salt to taste
pepper to taste
Directions:
Brown the meat in olive oil in a sauce pot or dutch oven. When meat is about 90% brown, then add in the onions. Finish browning.
Add in all the other ingredients. Cook on low flame for about 40-50 minutes. Or slow cooker it for 2 hours on low. Add cheese at the end and then serve.

This chili recipe is a World Champion Chili Recipe from the 2017 Terlingua Chili Cook-Off. This is the championship-winning recipe from Brent Allen. There are several different ways to make a red chili recipe and this is a competition championship chili recipe so it does not include many of those raw ingredients found in a home version of the traditional comfort food chili recipe such as onions or peppers. In competition, you can't add raw ingredients so you must use powders. If you want to try this at home -- which I recommend because it is DELICIOUS -- you can buy all of the chili powders I named online.

INGREDIENTS

-1/2 cup of beer
-2 cups beef brooth
-2 1/2 Tbsp chili powder
-2 teaspoon cumin
-2 teaspoon garlic powder
-1/4 teaspoon cayenne
-1 Tbsp ketchup
INGREDIENTS
-1 lb lean ground beef
-1 medium onion, diced
-1 jalapeno, diced 9 (you can sub any pepper you want, feel free to mix a variety together)

-2 1/2 Tbsp chili powder
-1 can of kidney beans, rinsed

-Olive oil
METHOD
-Place a large pot on medium-high heat
-Add a glug of olive oil then add diced onion and peppers of your choosing
-Sweat the onion and pepper for 5 mins or until translucent
-Add in the ground beef, spiced, garlic, and cook until browned
-Add in diced tomatoes, and rinsed beans (make sure you drain the beans in a strainer and stay them down with water before adding to the pot.)
-Add in beer, ketchup and broth and bring to simmer
-Simmer at least 35 min, 45 to an hour is ideal.
-Add more broth if chili is too thick.
