A moist applesauce cake recipe spiced with cloves, nutmeg, cinnamon, and frosted with cream cheese frosting and a salted caramel drip.

Applesauce Cake Ingredients ►
4 oz (113 g) unsalted butter (softened)
10 oz (283 g) granulated sugar
3 oz (85 g) vegetable oil
1 large egg (room temperature)
10 oz (283 g) cake flour
1 tsp baking soda
1/8 tsp cloves
1/4 tsp nutmeg
1/4 tsp ground ginger
1 1/2 tsp cinnamon
1/2 tsp salt
12 oz (340 g) applesauce (unsweetened)
1 tsp vanilla
Cream Cheese Frosting
16 oz (454 g) cream cheese (softened)
8 oz (227 g) unsalted butter (softened)
1 tsp vanilla extract (you could also use lemon or orange)
1/2 tsp salt
36 oz (1020 g) powdered sugar

Keto/Low Carb Apple Spice Cake
The perfect addition to a holiday table or even for breakfast. Even for those who have apple harvest, adding actual apples to this cake recipe is still a better option than a cake full of flour and white and brown sugar. It is super moist and fluffy with a hint of apple from unsweetened apple sauce and it feels like you are biting into stewed apples at the bottom from cooking down the chayote squash in cinnamon and allulose.

BETH'S APPLE SPICE CAKE RECIPE
Serves 10-12
INGREDIENTS:
1 ½ cup (270 g) brown sugar
¾ cup (180 ml) vegetable oil
¼ cup (60 ml) molasses
4 eggs
½ cup (120 ml) apple sauce
1 tsp (5 ml) vanilla extract
½ cup (120 ml) water
2 cups (240 g) flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
1 ½ tsp (7.5ml) ground cinnamon
1 ½ tsp (7.5 ml) ground ginger
½ tsp (2.5ml) ground cloves
½ tsp (2.5 ml) nutmeg
For Garnish:
2 Honeycrisp Apples, sliced horizontally into slices
Glaze:
¼ cup (48 g) whipped cream cheese
1 tbsp (7 g) powdered sugar
1 tsp vanilla
1-2 tbsp (15-30ml) milk, or more to reach a pourable consistency
METHOD:
Preheat oven to 200F (93C).
Line a baking sheet with parchment paper. Slice apples into very thin wheels, cutting the apple horizontally.
Place on baking tray in a single layer. Bake for 1 hour, then flip and bake for 1 hour more. Once done, turn off oven, open oven door and allow to cool for 30 mins. Once done keep at room temperature until ready to decorate cake.
Preheat Oven to 350F (175C).
Prepare a Bundt pan with baking spray (preferably the spray that also has flour in it) coating with a pastry brush to get into all the nooks and crannies and set aside.
In a large bowl, mix together the brown sugar, vegetable oil, molasses, 4 eggs, apple sauce, vanilla and water.
In a medium bowl whisk together the flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg.
Slowly add the dry ingredients to the wet ingredients and whisk gently to combine.
Pour batter into prepared Bundt pan. Bake for 35-40 mins until a long skewer comes out clean.
Once completely cooled, transfer to a cooling rack.
Prepare the glaze by mixing the cream cheese with the powdered sugar and vanilla, whisk until smooth. Add milk and whisk until frosting is pourable, may need to add more milk depending upon which brand of cream cheese you use, some brands are denser than others.
Ladle glaze over the top of the cake crown, allowing it to drip over the sides. Top with the dehydrated apples, transfer to cake stand. Enjoy!

The Dry Ingredients:
• 2 cups all-purpose flour
• 2 teaspoons ground cinnamon
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¼ teaspoon ground cloves
The Wet Ingredients:
• 4 eggs
• 1 and ½ cups granulated sugar
• 1 cup of vegetable oil
• ½ cup milk
• 2 teaspoons pure vanilla extract
The add-ins:
• ¾ cup chopped walnuts
• ½ cup raisins
• 2 tablespoons all-purpose flour
• 2 Fuji apples, peeled, cored, and finely diced
• ¼ cup light brown sugar
• ½-1 teaspoon ground cinnamon
The topping:
• 1 Fuji apple, cored and thinly sliced
• 2 tablespoons (approximately) granulated sugar
• 2 tablespoons melted butter
Preheat the oven to 350 °F, 180 °C.
Grease 2 (8.5 by 4.25 by 2.75 inches) loaf pans with soft or melted butter and line them with parchment paper.
Combine the wet ingredients in a large mixing bowl and whisk together until smooth.
Combine the dry ingredients in a bowl and whisk together. Sift the dry ingredients into the wet ingredients and whisk until combined.
Combine the raisins, walnuts, and 2 tablespoons of flour in a small bowl and mix together. Fold these into the batter.
For the Apple Spice cake, pour half of the batter into one of the prepared loaf pans. If you’re making two apple spice cakes then, pour the remaining batter in the other loaf pan.
Combine the diced apples, brown sugar, and cinnamon in a bowl and mix together. Add a tablespoon of flour and mix it together. Add the apples to the remaining batter to make the Apple Spice Loaf. Fold the apples into the batter then, pour it into the prepared loaf pan.
Arrange the apple slices over the batter (both pans) then brush them with the melted butter. Sprinkle the granulated sugar on top.
Bake in the center rack of the oven.
The Apple Spice Cake will bake faster than the loaf. Check them at the 40-45-minute mark by inserting a toothpick in the center of the cake/loaf. If the toothpick comes out clean, then, they are ready.
The Spice Cake should be ready at 45 minutes.
The Apple Loaf cake, that has the diced apples inside, will take longer. Up to 1 hour and 10 minutes.
Remove from the oven and allow the cakes to cool for 10-15 minutes, inside the loaf pans. Run a knife around the edges and take the cakes out of the pans. Set on serving trays and cool completely.
Dust with some confectioner’s sugar and serve with tea or coffee. Enjoy!
Notes:
Granny Smith apples are too tart for this cake. It is better to use Fuji, Gala, Braeburn, Honeycrisp, or any apples that will not melt that are also sweet. Red delicious apples will turn to applesauce.
The Apple Spice cake (without the apples inside the batter) will bake much faster than the loaf. It will be ready in 40-45 minutes.
The Apple Spice Loaf (full of apples) will take at least an hour, depending on your oven, to bake.
Chop the apples very small so that they bake evenly.

Fresh Apple Spice Cake

Ingredients
1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated
Directions
Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
