Authentic Taiwanese Beef Noodle Soup Recipe 牛肉麵
Hello! Welcome back to another episode of Uncle Bill's Kitchen.
Today, I am going to take you to a little country just outside China called Taiwan. One of their national dishes is Beef Noodle Soup 牛肉麵.
Savory and delicious, it's one of the dishes I miss the most.
I believe that I have captured the flavors here for you.
Here is a list of the ingredients you will need:
3 pounds beef heel (Shanks can be substituted)
2 tablespoons oil
A 2-inch piece of ginger (smashed)
6 cloves garlic (smashed)
3 scallions (cut into 2-inch segments)
1 onion (cut into wedges)
1 tomato (cut into wedges)
4 dried chilies (ripped in half)
1 tablespoon tomato paste
2 tablespoons spicy bean paste douban jiang
2 teaspoons sugar
1/2 cup soy sauce
1/2 cup Shaoxing wine
8 cups Beef Broth (or water)
1 Chinese aromatic herb packet (lu bao––do yourself a favor and hunt down the pre-packaged version; if you can’t access it though, see below for ingredients to create your own spice sachet)
32 ounces fresh wheat (white) noodles (900g)
A small handful of bok choy for each serving
Cilantro (finely chopped)
Scallions (finely chopped)
Pickled mustard greens (to taste)
TO CREATE YOUR OWN SPICE SACHET, TIE UP THE FOLLOWING INGREDIENTS IN CHEESECLOTH:
4 star anise
1 Chinese cinnamon stick
3 bay leaves
1 tablespoon fennel seeds
1 tablespoon cumin seeds
1 teaspoon coriander seeds
2 tablespoons Sichuan peppercorns
¼ teaspoon five spice powder
¼ teaspoon black pepper

Best Taiwanese Beef Noodles, Beef Shank, Star Anise, Soy Sauce, Bok Choy, Authentic
LIST OF INGREDIENTS
Basic Ingredients:
Beef Shank, 1-1/2 lbs (soak in water for 20 minutes to drain blood, pour out water then add cooking water)
Dark Soy Sauce, 1/4 cup
Regular Soy Sauce, 3/4 cup
Water (for cooking), 2 quarts
Soybean Paste, 2 Tablespoons
Star Anise, 10 full pieces
Dan's Secret Ingredients:
Scallion (green onion), 1 stalk
Lemon, 2 slices
Tomato, 1
Ground Cinnamon, 1/2 teaspoon
Ground Cloves, a pinch
Bay Leaves, 2
Cook the above in Instant Pot for 25 minutes
If you like, soak/marinate the beef overnight with the soup in a small container after adding more soy sauce, sesame oil, or hot pepper to the soup to add flavor to the beef.
Keep beef in refrigerator for a few hours before you slice the beef into pieces.
Reheat the beef in the soup after slicing.
Preparing Small Bok Choy:
Cut bok choy into pieces
Clean in water
Mix bok choy with oil, salt and garlic powder in a big bowl
Cover bowl and microwave for 1-1/2 minutes
Put noodles, beef, bok choy, and soup in bowl, add ground pepper or Sriracha Sauce before serving. Adjust spiciness by adding more ground pepper or Sriracha Sauce.

1 bulb garlic (peeled)
3 shallots (chopped)

20g (0.7oz) rock sugar
500g beef shin
3 tablespoons premium dark soy sauce
3 tablespoons low sodium light soy sauce
1/2 tablespoon spicy broad bean paste
2 bay leaves
2 stalks spring onion (tied into a knot)
1/2 tablespoon of Szechuan peppercorns
1 tablespoon of white peppercorns
400g daikon
1L (34 fl oz) water
2 teaspoons salt

Here is a delicious Cantonese beef noodle soup cooking. Beef perfectly stewed long enough into tender stage, that literary melt in your mouth stage. So tender so juicy so tasty. 10 oz. --- beef flank steak (cut ¾″ cube)
2 Tbsp -- cooking oil
1 Tbsp -- each, ginger & garlic (minced)
1 Tbsp -- soybean paste

Spicy Beef Noodle Soup (Chinese Style Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
200g Diced Beef
200g Noodles
1 Tbsp Chilli Flakes (or less according to your taste)
4 Cloves Garlic
1 Spring Onion
10g Ginger
30g Coriander
1 Tbsp Tomato Puree
1 Tsp Ground Sichuan Pepper
1 Tbsp Dark Soy Sauce
1 Tbsp Sesame Oil
1 Tbsp Chicken or Beef Granules
1 Star Anise
Salt To Taste
Method:
1. Place beef and star anise in saucepan with 2 litres of water, bring to the boil
2. Simmer for about an hour on medium to low heat till meat is tender, remove from pan
3. Meanwhile, finely chop the ginger and garlic
4. Roughly chop the spring onion and coriander
5. Remove the beef from the saucepan
6. Heat 1 Tbsp oil in a wok
7. Add ginger, garlic, chilli flakes and ground Sichuan pepper into the wok, fry for few seconds
8. Add the beef, tomato puree and soy sauce, fry for few seconds
9. Add a litre of boiling water, salt and chicken granules, bring back to the boil
10.Add the noodles, cook for 3 to 5 minutes until the noodle are cooked
11.Add the spring onion and coriander, stir and then remove from heat
12.Place into a bowl, drizzle with sesame oil and dash of vinegar then serve

Taiwanese Beef Noodle ????
Ingredients
- 1kg diced beef (I used flank but shin and stewing beef will work great)
- 1 brown (or white) onion
- 3 spring onions
- 6 garlic cloves
- 2 tbsp oil (canola, peanut or grapeseed)
- Thumb-size piece of ginger
- 1 long red chilli
- 2 tomatoes
- 3 star anise
- 2 tomatoes
- 1L beef stock
- 150ml soy sauce
- 100ml Shaoxing cooking wine
- 4 tablespoons doubanjiang
- 40g rock sugar (or brown sugar)
- 1 head bok choy (per person)
- 100g dried egg noodles (per person)
Method
1. In a large pot with 2 tbsp of oil, saute the brown onion, garlic and ginger.
2. After 2-4 minutes add the spring onion, red chilli, star anise and tomatoes (cut into quarters) and saute this for another 3-4 minutes.
3. Add your beef and rock sugar and saute this for another 3-4 minutes.
4. Add the doubanjiang, Shaoxing, soy sauce and beef stock, and give everything a good stir. Once it's come up to a light simmer, turn it down as low as it will go and cook until the beef is super tender, this will take 3-4 hour*s.*
5. Once your beef is almost ready, have a pot of water boiling to quickly cook your dried noodles and bok choy.
6. Then in a serving bowl, place your noodles followed by your beef, beef broth and bok choy, garnish with some finely sliced spring onion greens and a little more chilli oil if you like it spicy.
