King Arthur Flour Pumpkin Yeast Bread
This slightly sweet pumpkin bread recipe is the perfect addition to your fall table, or enjoyed anytime craving strikes for a delicious autumnal treat!
Makes 2 loaves; or 1 loaf and 12 to 16 rolls; or 24 to 32 rolls.
Ingredients:
- 2 tablespoons instant or active dry yeast
- 1/2 cup lukewarm milk
- 2 large eggs
- 11/2 cups puréed pumpkin, either fresh or canned
- 2 tablespoons vegetable oil
- 61/2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup brown sugar
- 21/2 teaspoons salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
Instructions:
1. Place all of the ingredients into a mixing bowl, mix, and knead (by hand, using a mixer, or in a bread machine set on the dough cycle) to make a smooth, soft dough.
2. Put the dough into a lightly greased bowl. Cover, and let it rise until doubled in size, about 60 to 75 minutes.
3. Gently deflate the dough, and turn it out onto a lightly oiled work surface. Divide it in half.
4. Shape each half into a loaf, and place in lightly greased 9 x 5 loaf pans. Alternatively, shape half into a loaf, and the other into 12 to 16 rolls, which can be placed into two 8 round pans, or into a 9 x 13 pan. Or, simply shape all of the dough into 24 to 32 rolls.
5. Cover the pan(s) and let the loaves/rolls rise until almost doubled in size, about 45 minutes. Toward the end of the rising time, preheat the oven to 350°F.
6. Bake the bread for 30 to 35 minutes, or until its crust is a deep golden brown and a digital thermometer inserted into the center registers about 190°F. Bake the rolls for about 20 minutes, until golden brown.
7. Remove the bread from the oven, and turn it out onto a rack to cool. Store completely cool bread or rolls well-wrapped, at room temperature, for several days; freeze for longer storage.

This amazing pumpkin bread is great on its own or can be enjoyed with toppings such as apple butter or cream cheese. For this recipe, i used my homemade pumpkin puree, but it also works perfectly with canned pumpkin puree. This simple pumpkin bread recipe can also be used to make pumpkin bread muffins.

KETO PUMPKIN BREAD
Makes 6 mini loaves
8 oz cream cheese, softened
1/4 cup pumpkin puree
4 tablespoon butter, melted
1/3 cup golden monkfruit sweetener
4 eggs
1/3 cup coconut flour
2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1️⃣ 01:27 - Add ingredients to a blender.
2️⃣ 02:13 - Blend until smooth.
3️⃣ 02:30 - Pour pumpkin bread batter into loaf pan, filling about 3/4 of the way to the top. Bake at 350 degrees for 20 minutes if using mini loaf pans or 30-40 minutes if using a larger loaf pan. Bake until cooked through.
4️⃣ 03:08 - Let cool in the loaf pan for several minutes before removing from the loaf pans and moving to a wire rack to cool.
