Ingredients:
Serves 3 - 4 pax
1 cup of water
1/2 teaspoon of chicken stock powder
400g of round cabbage
220g of enoki mushrooms
Sauce ingredients
------
1 tablespoon of sesame oil
2 tablespoon of cooking oil
15g of chopped young ginger
4 cloves of chopped garlic
2 chopped shallots
2 chopped red chilli (optional)
1/2 teaspoon of sugar
2 chopped spring onion (stem only)
2 tablespoons of oyster sauce
1 tablespoon of light soy sauce
125ml or 1/2 cup of water
Other ingredients
----
300g of prawns
150g of shabu shabu pork
150g of scallops
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
Rest of the spring onion

Homemade Spicy Hot Pot Flavor Base Recipe

**INGREDIENTS FOR GROUND SPICES**
- 4 pieces of bay leaves [香叶] [Amazon Link:
- 3 pieces of star anise [八角] [Amazon Link:
- 6 pieces of white cardamom [白豆蔻] [Amazon Link:
- 1 big stock of cinnamon, use scissors to cut it small [桂皮]
- 1 tsp of clove [丁香] [Amazon Link:
- 2 tbsp of Gancao [甘草] [Amazon Link:
- 1/3 cup of Sichuan peppercorn [花椒] [Amazon Link:
- 1 tbsp of fennel seed [茴香] [Amazon link:
- 1 tbsp of cumin seed [孜然] [Amazon Link:
- 1/3 cup of chili flake [辣椒粉] [Amazon Link:
**INGREDIENTS FOR CHILI BLENDS**
- 1.5 cup of red chilies [美人椒]
- 3/4 cup of garlic
- 1/2 cup of ginger
- 1/3 cup of face heaven chilies [朝天椒]
**OTHERS**
- 1 cup of Dou ban Jiang [豆瓣酱] [Amazon Link:
- 1/3 cup of spicy fermented soybean paste [香辣豆豉酱] [Amazon Link:
- 1 tbsp of sugar
- 1 tbsp of salt
- 5 cup of canola oil + 1 cup of lard
**STEP BY STEP**
- Grind all the dry spices into powder (4 pieces of bay leaves, 3 pieces of star anise, 6 pieces of cardamom, 1 big stock of cinnamon, 2 tbsp of Gancao, 1/3 cup of Sichuan peppercorn)
- Put the spice powder in a bowl, then add in 1 tbsp of fennel seed, 1 tbsp of cumin seed, 1/3 cup of chili flake. Mix everything together until well combined.
- Besides the dried ingredients. You also need to grind some wet ingredients (1.5 cups of red chili Mei ren jiao, 3/4 cup of garlic, 1/2 cup of ginger, 1/3 cups of face heaven chili)
- Put the chili mixture and the ground spices in the wok. Add 1 cup of Dou ban Jiang, 1/3 cup of fermented soybean paste. Stir this on low heat until well combined. Add 1 tbsp of sugar and 1 tbsp of salt, keep mixing everything.
- At the same time, get another pot. Heat up 5 cups of canola oil and 1 cup of lard. Traditionally this is done with pure beef tallow. But I don’t like that much animal fat so I just did a little change. You can use pure canola oil, it is fine. Bring the oil to 350 degrees Fahrenheit.
- Then pour the hot oil into the wok. You should see it is bubbling a lot. That will wake up most of the flavor. And be careful, it is safer to do it in batches.
- Let it cook on low heat for about 20 minutes. Turn off the heat and wait until it cools down to room temperature.
- This is my recommendation for making the spicy hot pot: 2 cups of base + 8 to 10 cups of chicken broth. This recipe is enough for you to make 3 hot pot.
- You can save the base in the freezer for 1.5 months.

Ingredients:
4 pieces garlic
small piece ginger
5 sticks green onion
1 tbsp doubanjiang
1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp black vinegar
splash toasted sesame oil
1/2 tbsp maple syrup
1/4 cup peanuts
1 tsp white sesame seeds
140g dry ramen noodles
2 tbsp avocado oil
1 tsp gochugaru
1 tsp crushed chili flakes
Directions:
1. Bring some water to boil for the noodles
2. Finely chop the garlic and ginger. Finely chop the green onions keeping the white and green parts separate
3. Make the stir fry sauce by combining together the doubanjiang, soy sauce, dark soy sauce, black vinegar, toasted sesame oil, and maple syrup
4. Heat up a nonstick pan to medium heat. Add the peanuts and white sesame seeds. Toast for 2-3min, then set aside
5. Boil the noodles for half the time to package instruction (in this case 2min). Gently loosen the noodles with chopsticks
6. Place the pan back to medium heat. Add the avocado oil followed by the garlic, ginger, and the white parts from the green onions. Sauté for about 1min
7. Add the gochugaru and crushed chili flakes. Sauté for another minute
8. Strain out the noodles and add to the pan followed by the stir fry sauce. Add the green onions, toasted peanuts, and sesame seeds but save some for garnish
9. Sauté for a couple of minutes, then plate the noodles. Garnish with the remaining peanuts, sesame seeds, and green onion

How to prepare frozen Edamame properly:
Defrost the frozen Edamame in room temperature (idealy in the fridge) for 3-4 hours prier to serving. If you are in hurry, you can also heat it in microwave. Boiling it is not advised, since the flavor will desolve in hot water easily.
