How To make Shahi Korma
8 Cloves garlic
1 1" cube of fresh ginger
5 T Blanched slivered almonds
1 c Water or beef broth
7 T Vegetable oil
2 lb Boned lamb or beef (1" cubes
10 Whole cardamom pods
6 Whole cloves
1 1" stick of cinnamon
2 Medium onions chopped
1 t Ground coriander
2 t Black cumin ground
1/2 t Cayenne pepper
1 1/4 t Salt
1 1/4 c Heavy cream
1/4 t Garam masala
Put the garlic, ginger, almonds, and 6 tablespoons water in a blender and blend until you have a paste. Heat the oil in a wide, heavy, preferable non-stick pot or wok over a medium-high heat. When hot. put in just enough meat pieces so they lie, uncrowded in a single layer. Brown the meat pieces on all sides, then remove them with a slotted spoon and put them in a bowl. Brown all the meat this way. Put the cardamom, cloves, and cinnamon into the hot oil. Within seconds the cloves will expand. Now put in the onions. Stir and fry the onions until they turn a brownish color. Turn the heat down to medium. Put in the paste from the blender as well as the coriander, cumin, and cayenne. Stir and fry this mixture for 3-4 minutes or until it too has browned somewhat. Now put in the meat cubes as well as any liquid that might have accumulated in the meat bowl, the salt, the cream, and rest of the water or broth (a bit more for beef). Bring to a boil. Cover, turn heat to low and simmer lamb for 1 hour and beef for 2 hours. Stir frequently during this cooking period. Skim off any fat that floats to the top. Sprinkle in the garam masala and mix.

Ingredients:
• Ghee 4 tbsp
• Onion 4-5 medium size (sliced)
• Cashew nuts 8-10 nos.
• Mutton 1 kg
• Ginger garlic paste 1 tbsp
• Salt to taste
• Curd 2 cups
• Red chilli powder 1 tbsp
• Coriander powder 4 tbsp
• Turmeric powder ½ tsp
• Cumin powder (jeera) 1 tsp
• Lemon juice 1 tsp
• Cumin seeds (Jeera) 1 tsp
• Black peppercorns 3-4 nos.
• Cinnamon stick 1 inch
• Bay leaf 1-2 nos.
• Cloves 4-5 nos.
• Black cardamom 1 no.
• Green Cardamom 3-4 nos.
• Mace 1 no.
• Nutmeg 1/4th (grated)
• Green chillies 3-4 nos. (slit0
• Ginger garlic paste 2 tbsp
• Hot water 750 ml
• Saffron infused water 1 tbsp
• Kewra water 1 tsp
• Fresh garam masala 2 tsp
Method:
• Heat ghee in a wok, add sliced onions and cook on medium heat until onions start to turn brown.
• Spread fried onions on a paper towel.
• Soak the cashew nuts in hot water for 10 minutes.
• Grind the fried onions and keep aside. Also grind the soaked cashew to make fine cashew paste.
• In a mixing bowl add mutton, ginger garlic paste, salt, curd, red chilly powder, coriander powder, turmeric powder, cumin powder and lemon juice, marinade the mutton well for minimum ½ an hour.
• Heat the same ghee used for frying onions, add the whole spices, green chillies and ginger garlic paste, sauté for 2-3 minute.
• Add the marinated mutton and cook on medium flame until ghee is released.
• Add the freshly prepared crushed fried onions.
• Add the cashew paste and cook for 8-10 minutes.
• Add the hot water and salt, mix well.
• Cover and cook on low medium flame for 1- 1.5 hours or until the mutton is cooked and tender.
• Add the saffron infused water, kewda water and fresh garam masala. Mix well and Cover and cook further for 8-10 minutes on low flame.
• Serve hot with roti or paratha or rice.
Fresh garam masala
Ingredients:
• Cumin seeds (jeera) 1 tsp
• Cloves 5-6 nos.
• Mace (javitri) 1 no.
• Nutmeg (jaiphal) ½ tsp
• Black cardamom 1 no.
• Green cardamom 2-3 nos.
• Black peppercorns 1 tsp
• Cinnamon stick 1 inch

• Grind all the whole spices into fine powder.

Ingredients for Shahi Chicken Korma:
- Chicken, curry cut with bones - 750 gms
- Onion chopped- 2 medium
- Ginger garlic paste- 2 tsp
Whole garam masala/ spices:
- Green cardamom- 4
- Cloves- 4
- Black cardamom- 2
- Cinnamon- 3
- Bay leaves- 2
- Peppercorns- 10
- Turmeric powder- 1/2 tsp
- Red Chilli powder- 3 tsp
- Coriander powder- 1 tsp
- Javitri/Mace powder- 1/2 tsp
- Jaiphal/ Nutmeg Powder- 1/4 tsp
- Garam masala powder- 1/2 tsp
- Curd whisked- 3 tbsp
- Cashew paste- 15 cashew nuts
- Oil- 4 tbsp
- Salt- 1tsp
- Coriander leaves, chopped- 2 tbsp
Preparation:
- Make a paste of the cashew nuts.
- Chop the onions.
- Wash and drain the chicken pieces, set aside.
- Chop the coriander leaves.
- Mix the turmeric powder, Chilli powder, coriander powder with 1/2 cup of water. Keep aside.
- Process:
- Heat oil and add the whole garam masalas and bay leaves. Stir it and add the chopped onions. Fry for around 7-8 mins on medium heat till the onion starts changing colour.
- Add the ginger garlic paste and fry for around 2 mins till raw smell is gone.
- Now add the powders mix and fry it for 2 mins on medium heat.
- Add in the chicken pieces and mix it well. Fry for 5 mins on high heat.
- Add salt to taste.
- Add the Jaiphal and Javitri powders.
- “Bhuno” the chicken on medium heat for around 7-8 mins.
- Now lower the heat and add the whisked curd. Mix well and continue to stir.
- Now increase heat to medium and continue to cook for another 3 mins till oil separates.
- Add a cup of water, mix and cover & cook for 10 mins.
- Remove cover and add the cashew nut paste and the garam masala powder, mix well and cover & cook for 10 mins.
- Garnish with chopped coriander leaves.
