How To make Korma Sabzee
1 1/2 lb Lean stewing beef or lamb
1/2 c Oil
1 lg Onion; finely chopped
2 Garlic cloves; crushed
1 1/2 c Water
Salt Freshly ground black pepper 1/4 ts Hot chili pepper (or more)
3 c Spinach, chopped
1 ts Cumin
2 tb Coriander leaves, chopped
- (more if desired) Cooking time: 1 1/2-2 hours 1. Cut meat into 3/4' cubes. 2. Heat oil in a heavy pan, add onion and fry
gently until transparent. Increase heat, add garlic and meat cubes and fry, stirring often, until juices evaporate and meat begins to brown. 3. Add water, salt and pepper to taste, chili pepper, and cumin. Bring to a slow simmer and reduce heat. Cover pan and simmer gently for 1-1 1/2 hours until meat is tender. Time depends on cut of meat used. 4. Add spinach and coriander and cook for further 10-15 minutes. 5. Mound chalau [see note 2] on a platter and spoon some of the sauce on top. Serve remainder in a separate bowl. Note1: 1/4 c. yellow split peas (daul nakhud) can be substituted for the spinach. This dish is then called Korma and the split peas are added at step 3. Note 2: To make 6-8 servings of Chalau, start with 3 cups of basmati or other good quality long grain rice. Heat 1/4 cup oil in a cooking pot, add the rice, and stir for 5 minutes. Add required water, bring to a boil, reduce heat to low and cook covered +/- 30 minutes. To cook this authentically, put a cloth over the rim of the pan before putting on the lid.

Vegetable korma is a very easy and simple recipe. We already seen aloo korma recipe. Today we are making hotel style vegetable korma that tastes just awesome. You can make this recipe with the ingredients easily available in your pantry. This is Karnatak style korma I am preparing. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Cauliflower florets
• Finely chopped Beans
• Sliced Carrot
• Fresh peas
• Chopped Potatoes
• 1/2 cup shredded fresh Coconut
• 1~2 dried Red chilies
• 4 Black peppercorns
• 2~3 Cloves
• A small piece of Cinnamon
• Oil
• 2 Cinnamon sticks
• 2 Cloves
• 2 Black peppercorns
• Finely chopped Onion
• 1 tsp Coriander powder
• 1 tsp Garam masala
• Red chili powder
• Few Cashew nuts
• Salt to taste
Method:
• Take cooker and add water at the base.
• Take flower, carrot, beans, carrot, peas, potatoes in a cooker pot.
• You can use veggies of your choice.
• Add water and close the lid.
• Cook on medium heat until just 1 whistle.
• Take fresh coconut, dry red chilies, black peppercorns, cloves, cinnamon, a little water in a
blender jar and blend everything into smooth paste.
• You can use dry coconut in place of fresh coconut.
• The masala is all ready.
• Heat up oil in a pan. Add cinnamon, cloves, black pepper, onion and fry until onion gets light
golden color.
• Add the blended masala, coriander powder, garam masala, red chili powder and mix well.
• Fry everything for about 2-3 minutes.
• Add the cooked veggies, cashew nuts, salt and mix everything well together.
• Add water to adjust the consistency and simmer the korma for about 8-10 minutes.
• Veg korma is all ready.
• It thickens up as time passes. So decide what consistency you want.
• This korma goes well with puri or bun.

Vegetable Kurma is one of the signature dishes from the South Indian Cuisine. Mix vegetables cooked in soothing and warming coconut based curry with minimum spices to give an extraordinary touch of flavours which give delight in every morsel.
Ingredients:
1 cup Cauliflower florets
1 cup green peas
½ cup beans
1 carrot
1 potato
2 tbsp oil
1 tsp cumin seed
¼ tsp asafoetida or hing
2 bay leaves
½ tsp turmeric powder
2 chopped tomatoes
½ tsp salt
1+¼ water
½ tsp salt
Coriander leaves for garnishing
For paste
½ cup fresh coconut
1 tbsp coriander sees
1 tsp cumin seed
1 tbsp fennel seed
3 cloves
2 cardamom
5 to 6 black pepper
1 green chilli
Small piece of ginger
20 cashews
2 tbsp soaked poppy seed or khus khus
1+½ cup water
