How To make Samoosas Potato Filling
500 g Potatoes; peeled and diced
15 ml Cooking oil
15 ml Butter
2 1/2 ml Mustard seeds
1 md Onion, chopped
2 1/2 ml Borrie (tumeric)
2 1/2 ml Chili powder
2 1/2 ml Salt
Boil potatoes until soft. heat oil and butter together and add mustard seed When seeds start popping, add onion and fry for about 5 minutes, until golden brown.Add diced potatoes, borrie, chilli and salt and cook for 10 minutes or until all the liquid has evaporated. allow to cool before filling samoosas. INGREDIENTS:
For dough:
All_purpose flour 2cups
Salt 1 tsp
Carom seeds 1/2 tsp
desi ghee /oil 4 tbsp
water 150ml
ingredients for stuffing:
Desi ghee/oil 2 tbsp
Garlic (chopped) 2tbsp
ginger (chopped) 2tbsp
cumin 1 tbsp
green chilies 3 (chopped)
onion one medium size
nigella seeds 1 tsp
salt to taste
red chili powder 1 tsp
red chili flakes 1 tsp
lemon juice 1 tbsp
coriander powder 1 tsp
boiled potatoes 600g
cilantro chopped half a cup

Making the potato curry to use for filling samosas - quick easy and delicious every time!
We had a few viewer requests for the recipe to make the potato curry filling I use to make my potato samosas. This quick and easy recipe is my go to for making my potato samosas
Ingredients - to make ~1 1/2 dozen regular samosas
5 medium potatoes, sliced into chips/fries
1/4 cup oil
1/2 tsp jeera
1/2 tsp hurdee powder
1 tsp salt
To be added raw to cooled curry:
1/2 onion finely chopped
Handful of:
Fresh dhania
Spring onion
Few sprigs of mint
1 green chillie (to your preference)
Cool curry, then add onions, herbs and chillie and mix well. The fill samosas as you would do for chicken or mince samosas.

Samosa's are loved in every household as a snack, or an accompaniment to a main dish or a meal.
The samosa is claimed to have originated in the Middle East (where it is known as sambosa), and is commonly found within numerous locations across the world, from Africa to india, the Samosa is loved by all.
This is my aloo samosa recipe, which has a mix of potatoes, onions and spices wrapped up in a hand made pastry, deep fried until perfect. Best served with a green mint chutney this will wow everyone that takes a bite.

INGREDIENTS:
Samosa Filling:
600g potatoes
1 medium onion finely diced
Good handful fresh coriander
2 tablespoons oil
juice of half a lemon
1/2 tablespoon salt
1 teaspoon:
chilli powder
coriander powder
garam masala
nigella seeds (kolonji)
dried chilli flakes
1 tablespoon cumin seeds
3 green chillies (optional)
2 teaspoons of:
ginger & garlic
Samosa Dough (makes approx 22)
2 Cups of Plain Flour-500g
150ml/200ml water to bind the dough
4Tablespoons of oil
1 teaspoon salt
1/2 teaspoon carom seeds (ajwein)
Left over filling can be frozen in zip-lock bags for up to 1 month in the freezer! ????????
