Springbok Leg Roast
Ingredients
salt lemon and black pepper, to taste
1/2 tsp ground allspice
2 Tbsp chopped or fresh rosemary
3/4 to 1 lb leg of springbok venison
2 garlic cloves
3Tbsp olive oil
Rub the salt, pepper, allspice and rosemarie on the meat and put it in a bowl.
When it’s time to roast, pre-heated oven to 300°F.
Slice the garlic/rosemary herbs into slivers and poke them into slits all over the meat.
Put the meat in a roasting pan and add the wine or water. Cover with a lid or foil and roast in the pre-heated oven until the meat is very tender, for about 2 hours for venison. Add a little water now and then if needed. This is not a dish to serve rare. When its almost ready, mix squeezed half lemon juice into a bowl add 2 spoons olive oil and add black pepper. Mix well and rub or brush the mix on your roast and put it back in the oven for about 30 more minutes.
Put the cooked roast on a warm plate and let it rest, covered with foil, for about 10 minutes, before serving. Remove the foil and serve.
If you like, use the pan drippings with a little more water or red wine to make a quick, flour-thickened pan sauce.
Best served in Zimbabwe ???????? with Sadza, vegetables, and gravy or soup.
You can serve it with Salad, Mash and Gravy.

Ingredients
1 cup of Garlic powder
1cup of Rosemary powder
1 cup of Aniseeds
1 cup of Coriander
1 cup of dried grated Ginger
1 tablespoon of Peppercorn
1/3 cup of Dried Red pepper
1/3 cup of Turmeric powder
25 to 30 pieces of dried Bay leaves
Combine all dried herbs and spices into a big bowl, mix evenly.
Transfer into a grinder mill, grind till smooth.
Store in an airtight container away from direct sunlight.
This is the ultimate seasoning. You can choose to use it without adding blended spices and it will still give your meat or food that amazing and delicious flavor you want.
This herbs spice can last a whole year without going bad, if stored well. Find all dried herbs and spices in your local markets. I got mine from Agbogbloshie market ( Accra, Ghana). Feel free to omit or add your favorite spices or herbs.

My Turkey was 10 pounds
Herb butter ingredients:
One cup of salted butter
1/2 cup chopped parsley
2 tbsp Italian seasoning
1 tbsp garlic paste
Salt and pepper to taste*
Dry rub ingredients:
1 tbsp adobo seasoning
2 tbsp Montreal chicken seasoning
1 tbsp smoked paprika
2 tbsp onion powder
2 tbsp garlic powder
2 tsp black pepper
2 tsp rubbed sage
Cavity stuffing:
4 sprigs of Thyme
4 sprigs of Rosemary
4 sprigs of Sage
2 lemons cut into wedges
1 orange but into wedges
1 onion cut into wedges
1 whole Garlic
Vegetables that go on the bottom:
2 stalks of celery
1 large carrot
1 Onion
Bake at 350 for 3 hours for a 10 pound Turkey. The cooking time will vary if your turkey is larger or smaller than 10 pounds. Just make sure you cook for 15-20 minutes per pound.
