Ingredients:
all-purpose flour 200g
salt 1.5g/¼tsp
warm water 120ml
olive oil 15ml/1tbsp
banana 4
white sugar (optional)

200g all-purpose flour
1.5g salt
Mix well
120ml warm water
15ml olive oil
Knead the dough
Cover and rest for 20 minutes
After 20 minutes
Divide into 4 parts
Shape each piece into a ball
A bit of oil
Coat the dough with oil and place in the bowl
Repeat
Cover and rest for at least 2 hours
After 2 hours
Pour some oil on a kneading board
Take a piece of dough
Flatten the dough
Flatten the dough more with a rolling pin
Stretch the sides of the dough
Cut off the edges to make the sides straight
4 ripe bananas
Slice the bananas
Place the banana slices on the dough
Wrap the banana slices with the dough
Olive oil or butter
Place in the frying pan
Brush some oil on the dough
Flip over when the first side is golden brown
Continue to fry until both sides are golden brown
Done!
Sprinkle some white sugar (optional)
Repeat the same steps

Chocolate Chunk Banana Bread is sweet, thick, fluffy, and, dare I say, moist. ????This recipe is my absolute favourite! Now there might be a lot of banana bread recipes out there, still, this one is exclusive and one of the best loaves I have ever made using super nutritious and healthy chickpea flour.
Ingredients:
1/2 cup butter, softened
6 tsp castor sugar
1+1/2 cup mashed bananas
3/4 cup milk
2 cups chickpea flour
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon cinnamon powder
1/2 cup crushed walnuts
1/2 cup chocolate chunks
Method
1. Pre-heat the oven to 180C. Line a 9” X 4” loaf pan with parchment paper
2. In a bowl mix butter and sugar, until the mixture is fluffy.
3. Add in the mashed bananas and milk to it and mix it well.
4. Now sift in the chickpea flour, baking powder, baking soda and cinnamon powder.
5. Make sure you do not over mix.
6. Fold in the crushed walnuts and chocolate chunks. The batter will be thick.
7. Transfer the batter into the prepared loaf pan and bake at 180C for 40-50 minutes.

2 Ripe bananas
The bananas are about 215g without peel
Mash the bananas
I used the end of a rolling pin to mash the bananas
3g active dry yeast
Mix & wait for 5 minutes
15ml olive oil
Mix well
200g All purpose or bread flour
1.5g salt
1.38g ground cinnamon
Mix well
Cover and rise until double size
Prepare a baking dish or baking pan
Spread oil or butter in the pan
Sprinkle some flour
Move the dough onto the work surface
Fold the dough using your hands or a scraper
Flatten the dough using a rolling pin
Shape the dough with your hands
60g cranberries
Spread the cranberries on the dough
Roll up the dough from the long side
Shape the dough into a ball
Place into the baking pan
Cover and rise for 30-45 minutes
Brush olive oil on top (optional)
Bake for 15 minutes at 356F/180C
After baking
Place onto a wire rack to cool
This banana bread is so soft and delicious!
