Ingredients

pound
beef, ground
16
oz
vegetables, frozen, italian mixed

cup
water

cup
cabbage, shredded
1
parmesan cheese, grated
1
each
tomato soup, canned, condensed
1
teaspoon
basil, dried
1/2
cup
macaroni, elbow, uncooked
Directions:
In a soup pot, cook beef until well browned. Drain off fat. Stir in frozen vegetables, undiluted soup, water and basil. Heat to boiling, stirring occasionally. Simmer 15 minutes. Stir in cabbage and elbow macaroni. Cook until tender. Sprinkle with grated cheese.
Serves 6.

Ingredients:
• 3 lbs. of chuck roast
• 1 Medium yellow onion
• 5 Stalks of Celery
• 5 Carrots
• 28 oz can of Crushed Tomato
• 2 cans of Cannellini beans
• 1/4 cup of olive oil
• 12 cups of beef broth
• 16 oz of cheese tortellini or any short pasta
• Salt & pepper to taste
Instructions:
1. Dice your vegetables and slice chuck roast into 4-5 equal pieces
2. Heat ¼ cup of olive oil and brown chuck roast on both sides
3. Once meat is brown, remove and then add the veggies and cook for 5 minutes
4. Add meat back into pot and then add beef broth, crushed tomatoes and salt & pepper to taste
5. Once the soup comes to a boil, lower heat and let simmer for about 1 & 1/2 hours
6. Then add pasta and cannellini beans and continue to cook for another 12 minutes
7. Enjoy!
