This simple Indian curry is a good example of green mango use. To 50 g desiccated coconut add just enough boiling water to moisten, stir and set aside (or use 70 g fresh coconut). Peel 800 g green prawns and devein them. Peel two green mangoes and cut the flesh into 2 cm cubes. Into the bowl of a food processor put 3 birdseye chillies (or less to taste), a tablespoon of ground coriander and the coconut. Process to a paste. Peel and slice 2 onions. Chop half a bunch of fresh coriander. In a saucepan, heat 2 tablespoons of oil and fry the onions gently until they are transparent. Add 2 or 3 fresh or dried curry leaves and the coconut paste and continue frying over a low heat, stirring occasionally, for about 10 minutes. Add 500 mL water. salt to taste, half a tablespoon of
turmeric, the mango and simmer for 10 minutes. Add half a cup of thick coconut milk and the prawns and cook for a further few minutes, just until the prawns turn pink. Ingredients:
400 grams of prawns, cleaned and deveined with tails left intact. The weight is prior to cleaning.
105 grams medium sour green, unripe mango
¼ tsp turmeric powder
Not quite ¼ tsp fenugreek powder
1 tbsp virgin coconut oil or any coconut oil
3 stalks curry leaves,
1 cup of water plus 100 ml hot water
Salt to taste
To grind:
1 cup grated coconut
½ a big onion, chopped
3 green bird’s eye chillies
1 tsp chilli powder
1 tsp coriander powder

Goan Prawn Raw Mango Curry
Ingredients required for prawns marination
300g prawns (cleaned & deveined)
1/2 tsp turmeric powder
1/2 tsp salt
1 raw mango (cut as desired)

Method:-
- In a cooking pot heat oil and add onions to it. Cook until the onions turn pink.
- Add ginger-garlic paste and green chilli-coriander paste and mix well.
- Then add prawns, raw mango and mix well.
- Now add turmeric powder, mix masala, salt, grated coconut and water. Stir.
- Cover with a lid and cook for 15-20 minutes.
