How To make Pesto Sauce, Winter Style
5 Large Cloves Garlic
1 Bunch Parsley
1 1/2 c Olive Oil
2 tb Dried Basil
2 oz Bottle Pignoli (Pine Nuts)
Or A Small Package Of Fresh Pignoli 4 oz Parmesan Cheese, Grated
(Plus More For Dusting Pasta) 1/2 ts Salt
Peel and cut up the garlic cloves. Rinse the parsley and remove the stems. Shake dry. Add everything to the blender in the order given. Blend on HIGH until the sauce is smooth. Refrigerate, covered, until needed. This makes enough sauce for 2 lbs of pasta or 8 servings. NOTES: You will need extra grated Parmesan cheese to sprinkle over the pasta that you have added the sauce to. Do this just before serving. Leftover sauce freezes well. Use to flavor soups, or on broiled meat or fish, or as a spread on toasted French Bread.

Pesto is a sauce typically made with basil, pine nuts, olive oil, and grated Parmesan blended together. In this video I'm gonna share you how to make pesto from scratch using arugula instead of basil leaves.
Arugula pesto is one my my fav pesto sauce, because it's also very healthy, and it has a peppery and slightly spicy taste that works perfectly for pasta, fish, meat or even pizza sauce.
This is what I call perfect pesto sauce because I'm gonna show you how to achieve the bright green pesto that works everytime!
You can also make this pesto sauce with pestle and mortar :) Easy!
How to make easy pesto sauce, you'll need :
100 gr arugula
2 garlic cloves
40 gr toasted almond flakes
80 gr parmesan
salt
80 ml olive oil (add more if needed)

Ingredients -
1/2 cup Kaju pieces (Cashew nuts)
7 Kali Lasun (Garlic cloves)
15 Kali Mirch (Black Peppers)
1/4 cup Parmesan Cheese
1/2 cup Olive Oil
135 grams Basil Leaves (After cleaning)
Ingredients for Pasta -
1 tblsp Olive Oil
1/2 yellow capsicum diced
1/2 red capsicum diced
1 big Tomato diced (or cherry tomatoes)
1 tsp Chilli Flakes
250 grams Whole Wheat pasta (Or normal pasta)
Pesto sauce prepared above
1/2 cup water
1 tsp salt (or as per taste)
Basil leaves for garnishing
Enjoy hot pasta and garnish with parmesan cheese.

Full written recipe for Pesto Pasta
Prep time: 10-15 minutes
Cooking time: 15 minutes
Serves: 3-4 people
Ingredients:
Pesto
OLIVE OIL | ऑलिव ऑयल 2-3 TBSP
GARLIC | लेहसुन 1 CLOVE
WALNUT | अखरोट 4-5 NOS.
SALT | नमक A PINCH
BASIL LEAVES | बेसिल के पत्ते 100 GRAMS
PARMESAN CHEESE | पारमेसान चीज़ 50 GRAMS (GRATED)
OLIVE OIL | ऑलिव ऑयल 3 TBSP
Boiling pasta
SALT | नमक A LARGE PINCH
PASTA | पास्ता 250 GRAMS (PENNE)
Final Assembly
PASTA | पास्ता AS REQUIRED (HOT)
PARMESAN CHEESE | पारमेसान चीज़ AS REQUIRED
PESTO | पेस्तो AS REQUIRED
PASTA WATER | पास्ता वाला पानी 1-2 TBSP
SALT | नमक IF REQUIRED
Method:
To make pesto add olive oil in a chopper along with garlic, walnut & a pinch of salt & grind it together to emulsify the oil nicely.
Further add the basil leaves, parmesan cheese & olive oil, grind it again until a semi-coarse paste is formed, make sure you scrape the sides of the chopper.
Your pesto is ready.
To perfectly boil the pasta bring water to a roaring boil in a stock pot, then add salt & pasta of your choice & let the pasta for boil 8 minutes.
Once boiled strain the pasta using a large spider, make sure you reserve the pasta water.
In a bowl add boiled pasta as required, parmesan cheese & pesto as per your taste preference & mix well.
Further add a couple of tablespoons of the pasta water to bring the pasta to the right consistency, make sure that the pasta water is hot.
Once mixed taste & adjust the seasoning if required.
Your quick & easy pesto pasta is ready.
