Chicken with Sun Dried Tomatoes, Artichokes & Mushrooms
Looking for a quick weeknight meal that is full of flavor? This dish of chicken, mushrooms, sun dried tomatoes and artichokes with fresh thyme is BURSTING with mediterranean flavors!! Don't like mushrooms? No worries, just add more of another ingredient! Want to make it with pasta instead of rice? Go for it! Yum.
For 2 servings, you'll need:
2 chicken breasts
Rice or pasta
Salt and Pepper
2 tbls chopped fresh thyme
1 cup of artichokes
1/2 cup of sun dried tomatoes
1 cup of mushrooms

Today we’ll be making for you a recipe we’ve been enjoying for years, it’s so simple and packed full of flavor. It’s a quick and easy meal for a weeknight or for a Sunday dinner…. It’ll taste like it took you hours to make but it only takes 20 to 30 minutes, I hope you enjoy it as much as we do. For Vegetarian option you can substitute the sausage for whatever brand vegetarian or vegan sausage you like and you can substitute the cheese as well.

Artichoke Pasta
Bright, fresh, and bursting with flavor, Artichoke Pasta is one of my favorite dinners to make when I’m craving Italian. I always keep a couple bags of artichoke hearts in the freezer just for this recipe, I love it that much.

Recipe - Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts
INGREDIENTS:
●1 (12 ounce) package uncooked penne pasta
●2 tablespoons olive oil
●2 cups cooked, shredded chicken
●salt and black pepper to taste
●1 pinch garlic salt, or to taste
●2 tablespoons minced garlic
●1 small onion, diced
●1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
●3 ounces chopped sun-dried tomatoes (not oil-packed)
●2/3 cup reduced-sodium beef broth
●1 (14 ounce) can artichoke hearts, drained and quartered
●2 tablespoons butter
●1 tablespoon grated Parmesan cheese
