CRISP COCONUT BARS
From Chef Cheryl-Ann Shortt – Charles on Cup of Joe Caribbean
6 tbsp Blue Band Creamy
6 cups corn flakes cereal
1 cup coconut flakes
12 ounces marshmallow (small or large ones can be used)
Melted chocolate
Red sugar sprinkles (optional)
Method
1. Grease a 8x8” baking dish, set aside (you can also line it with baking paper with piece over hanging the baking dish for easy removal)
2. Place the marshmallows, and Blue Band in a heat proof bowl (at this stage you can use the microwave to melt the marshmallows and Blue Band or you can place the bowl over a pot of water forming a double boiler) keep stirring until marshmallows is completely melted. Remove from microwave or double boiler.
3. Add the corn flakes and coconut flakes to the melted marshmallows and Blue Band mix, stir until completely combined.
4. Pour into the prepared dish, (Tip: to smoothen the top of the mixture wet your hands and level the top of the mix, this way the mixture won’t stick to your hands).
5. Pour the melted chocolate on top and evenly coat the top, place in the chiller until completely set. If using red sugar, sprinkle over the set chocolate before cutting into bars.
6. Cut into bars and enjoy.

Get Young Living essential oils!
In a bowl, mix 3oz of Cream Cheese, 3 C Powdered Sugar, and 6 drops of Peppermint Essential Oil (CAUTION!! ONLY use Therapeutic Grade essential oil that you can ingest!! I use Young Living)
Mix until smooth, roll into balls and press to flatten. Pop into the freezer.
Melt 3/4 C chocolate chips and dip patties in to coat. Pop into the freezer to set. These can stay in the freezer up to a month.
