Pumpkin Pie Overnight Oats ????????✨
Ingredients:
1 ¼ cup oats
1 ¼ cup oat milk
½ cup pumpkin purée
1 tbsp chia seeds
¼ cup vanilla plant-based yogurt
1 tsp brown sugar
¼ tsp pumpkin pie spice
Instructions:
1. Mix all ingredients together in a container until everything is well combined. Wait 2-3 minutes then stir again to break up and clumps that might be forming.
2. Cover the container and place it in the refrigerator for at least one hour or until the oats thicken.
3. Stir again before serving.

Hey guys!
I love to bake. Love it. If I didn't desperately need to lose weight I would bake every day. XD I was excited to finally get a camera set up at my counter that seemed to work like I wanted it to and I feel like I managed to keep most the potentially sharp sounds nice and quiet. (The parchment paper excluded) I hope this works for you, or at least gets you in the baking spirit!
I'd put the recipe on here for you guys but an essential ingredient has it on the back, so if you want to make it, just go grab yourself a bag of butterscotch chips! And heed my advice... store brand butterscotch chips are gross, pay the little extra and get yourself the Tollhouse ones.

Oatmeal, Walnut, and Raisin Muffins with Tea!
Muffin Ingredients
- 1 cup oatmeal
- 2 cups wheat flour
- 1 stick butter
- 2 tsp baking powder
- 2 egg
- 1 1/2 cup milk
- 1 tsp vanilla powder / extract
- 1/4 tsp salt
- 1/2 cup light brown sugar
- 1/2 cup raisin
- 1/2 cup chopped walnuts
- Some walnuts to decorate
Tea ingredients
- 2 cups water
- 1 cup milk
- 1/4 cup sugar
- 3 cardamom pieces
- Some cloves
- 2 small cinnamon pieces
- 3 tsp loose leaf tea
Muffin procedure
1. Into one mixing bowl, add the 1 stick butter and 1/2 cup light brown sugar, mix with hand mixer. (If you want it sweeter, add 1 cup brown sugar or honey)
2. Add 2 eggs one at a time, mix with hand mixer.
3. Be sure to mix ingredients well.
4. Add half a cup of milk and mix with hand mixer.
5. To another mixing bowl for dry ingredients, add the 2 cups of wheat flour.
6. Add the 1/4 tsp salt, 2 tsp baking powder, and 1 tsp vanilla powder to the dry ingredients bowl. Mix well with a spatula.
7. Back to the first mixing bowl (with wet ingredients), add the 1 cup oatmeal.
8. Add the mixed dry ingredients to the wet ingredients bowl, half the bowl at a time. Mix well with spatula.
9. Add the rest of the milk (1 cup) to the bowl. Mix well.
10. Add the 1/2 cup raisin and chopped walnuts to the bowl. Mix well.
11. Using a cupcake pan, spray any non-stick cooking spray onto the pan.
12. Pour the batter into the circular cutouts
13. Add walnuts or other toppings to the muffins.
14. Place pan on the middle rack of the oven at 360 degrees Fahrenheit for 25 minutes or until golden brown
15. If you have leftover batter, spray a small cake pan with non-stick spray and pour the batter in.
16. Place small cake pan in the same oven.
Tea procedure (for 4 servings)
1. Place a medium-sized pot on the stove on medium heat
2. Add 2 cups of water and 1 cup of milk
3. Add 1/4 cup sugar
4. Add some cloves, ~2 small cinnamon, and ~3 cardamom to a mortar and crush them together
5. Add the crushed spices to the pot
6. Once the milk starts to boil, add 3 tsp of loose leaf tea (or 3 tea bags) to the pot
7. Cook until tea darkens to a rich brown color
8. Total cook time: 5-8 minutes

This healthy, make-ahead breakfast takes just 5 minutes and a handful of ingredients. It is perfect for busy mornings all year round and is easily customizable with flavors that will suit the whole family, from PB&J to pumpkin pie to mango!
What are overnight oats?
Overnight oats are oats softened in milk in the refrigerator over a long period of time (4 to 12 hours), rather than cooking them on the stove or in the microwave. This recipe is a simple combination of your milk of choice, yogurt, maple syrup, chia seeds, and oats. The yogurt and chia seeds give the oats a lovely, pudding-like texture. Bonus? They also provide plenty of protein and fiber for a satisfying breakfast. Maple syrup lends natural sweetness to the oats. Agave syrup, honey, stevia, simple syrup, or even sugar (that’s been thoroughly mixed in) can also be used to sweeten the oats to your liking.
What kind of oats are in overnight oats?
This recipe calls for old-fashioned rolled oats. They soak up the liquid overnight and yield a tender, almost creamy texture. Quick-cooking and instant oats tend to be mushy after a night in the refrigerator and steel-cut oats are too tough. Old-fashioned oats are just right!

2 tbsp. plain greek yogurt
2 tbsp. maple syrup or honey
2 tsp. chia seeds
1/2 c. old-fashioned rolled oats
1/4 c. fresh berries, to serve
FOR THE PB&J OATS:
2 tbsp. chunky or smooth peanut butter
1 recipe Overnight Oats
1 tbsp. strawberry preserves
Chopped roasted peanuts, to serve
FOR THE PIÑA COLADA OATS:
1/4 c. chopped fresh, frozen, or canned pineapple
1 recipe Overnight Oats, made with refrigerated coconut milk
Toasted coconut chips, to serve
FOR THE PUMPKIN PIE OATS:
1 recipe Overnight Oats, made without the yogurt
1/4 c. pumpkin puree
1/4 tsp. pumpkin pie spice, plus more for sprinkling
FOR THE MANGO STICKY OATS:
1/4 c. chopped fresh or frozen mango
1 recipe Overnight Oats, made with refrigerated coconut milk
1 tbsp. sweetened condensed milk
Toasted sesame seeds, to serve

FOR THE OVERNIGHT OATS:

In an 8- to 12-ounce jar, combine the milk, yogurt, maple syrup, and chia seeds. Stir in the oats, making sure they are all submerged in the milk. Cover and refrigerate for at least 4 hours or up to 3 days.

FOR THE PB&J OATS:

Stir the peanut butter into the Overnight Oat mixture until well distributed but not completely combined. Spoon the preserves on top of the mixture. Cover and refrigerate for at least 4 hours or up to 3 days.
