::::::::::::::::::::::::
Almond - 1/3 cup
Brown Sugar - 3 tbsp
Unsalted Butter - 2 tbsp
Honey - 1 tsp
Butterscotch essence - 1/2 tsp
All purpose flour - 2 tbsp
Chop the almonds into tiny bits. Heat up a pan. Add butter and brown sugar. Mix well. Add honey. Stir on a low flame. Once the sugar gets fully dissolved and bubbles start to appear, remove from fire. When the mixture cools, add the almonds. Mix and add the essence followed by flour. Combine all ingredients to form a dough like consistency. Line a baking tray with parchment paper. Scoop out a portion of the dough, approximately two teaspoons for one cookie and place on the tray. There should be only 5 -6 cookies per batch. Maintain a distance between the cookies as they are likely to spread in circles. Preheat oven at 180°c. Bake the cookies for 7-8 minutes. When the baking is complete, keep them along with the parchment paper on a wire rack to cool. Bake the second batch of cookies. On cooling, gently lift each one and store in airtight containers.

INGREDIENTS (about 3 dozens)
1/2 cup (60 g) almond flour
1/4 cup (40 g) all-purpose flour
1/8 teaspoon salt (just a pinch)
7 tablespoons (100 g) unsalted butter
2 tablespoons light corn syrup
1/3 cup (65 g) sugar
1/3 cup (65 g) light brown sugar
2 tablespoons (25 g) white sesame seeds
Bake in a preheated oven at 350°F (175°C) for 7-9 min
Baking pan (Nordic Ware Half Sheet Pan) – 17.88” x 12.88”
DIRECTIONS:
1. Preheat oven at 350°F (175°C). Line baking sheets with baking mat or parchment paper.
2. In a small bowl, mix together the flours and salt.
3. Melt the butter in a small saucepan over medium low heat. Add corn syrup and sugar. Continue to stir until sugars are all dissolved. When the mixture comes to a boil, remove from heat.
4. Let the sugar cools down for 1 -2 minutes. Add the flours mixture and stir until combined (about 1-2 minutes).
Note: If the pan is too hot and “cooks” the flour when adding the flour too fast, the butter will separate. This is a common problem. So, if you see the butter separating, that means your pan is too hot. Allow the sugar to have a bit more time to cool down next time.
5. Add sesame seeds and stir it in.
6. Drop about one teaspoon of batter per cookie on baking sheets and space them 3 inches apart.
7. Bake in a preheated oven at 350°F (175°C) for 7-9 minutes until golden brown.
8. Cool on the baking pan or transfer cookies (together with the baking mat) to a wire rack and let them cool completely.
9. Cookies can be stored in an airtight container for a few days.

????????????????????INSTRUCTIONS ????????????????????????
1. Place 1 1/2 cups of whole raw almonds into a food processor and pulse them on high speed until they chop up into fine crumbs. Then set them aside.
2. In a medium saucepan add 1/2 cup unsalted butter, 3/4 cup brown sugar, and 1/4 cup honey. Stir using a metal whisk.
3. Once it comes to a boil, turn the heat off and remove the saucepan from the heat.
4. Then stir in 1/2 teaspoon vanilla extract and 3 tbsp all-purpose flour.
5. Now, use a spatula to mix in the finely chopped almonds.
6. Then scoop out about 1/2 tablespoon-sized scoops of the cookie dough onto a baking sheet lined with a silicone mat. If you don’t have a silicone mat, parchment paper works too. But the mats will result in more even baking.
7. Make sure to place each scoop of the lace cookie dough at least 3 inches apart. They will spread a lot when they bake.
8. Now preheat your oven to 325 degrees Fahrenheit. Then take each piece of cookie batter and roll it out to a ball, and place it half onto the baking sheet.
9. Place each baking sheet in the center rack (one at a time). Then bake for 8 minutes making sure to turn once after 4 minutes.
10. While the cookies are looking, melt 1 1/2 cups of semisweet chocolate in a microwave-safe bowl until fully melted. Always be sure to do this in intervals with stirring in between to avoid scorching the chocolate.
11. Now take 1 Florentine cookie and gently spread a little bit of the melted chocolate on the back of it, then place a similar sized cookie on top. So you want the back of each cookie to sandwich the chocolate in between them.
12. Let the chocolate set for about 1-2 hours before serving.
