How To make Lady Bird Johnson's Lace Cookies
-Mary Wilson BWVB02B 1/2 c Flour
1/2 c Coconut
1/4 c Corn syrup
1/4 c Brown sugar; firmly packed
1/4 c Margarine
1/2 ts Vanilla
Mix flour with coconut. Combine syrup, sugar and margarine in saucepan. Cook over medium heat. Stir until well blended. Remove from heat; stir in vanilla. Blend in flour mixture. Drop by teaspoonfuls 3-4 inch apart on ungreased cookie sheet. Bake at 325 degrees for 8 to 10 minutes. -----

Christmas is my favourite time of year and I love filling the house with Christmassy smells. Making gingerbread men fills your home with scents of ginger, cinnamon and nutmeg, and for that reason only this recipe is well worth making. Give it a go yourself and let me know how you get on.

To make this for yourself you will need:
♡ 355g/12oz/3¾ cups plain flour + extra for dusting
♡ 100g/3½ oz/½ cup salted butter
♡ 5½ tsp. ground ginger
♡ 1½ tsp. ground cinnamon
♡ ½ tsp. nutmeg
♡ 1 tsp. bicarbonate of soda
♡ 175g/6oz/¾ cups soft light brown sugar
♡ 4 tbsp. golden syrup
♡ 1 medium egg
♡ Lots of candy canes
Equipment you will need:
♡ Mixing bowl
♡ Wooden spoon
♡ Baking sheet
♡ Baking paper
♡ Gingerbread man cookie cutter
♡ Cake pop sticks or metal skewers
♡ Heart shaped cookie cutter
Method:
1. Add the flour, butter, ginger, cinnamon, nutmeg and bicarb to your mixing bowl. Rub the mixture between your fingers until it resembles breadcrumbs and then add the golden syrup and one egg. Mix this up with a wooden spoon and then turn out onto a lightly floured worktop and bring together. Roll the dough out to about half a centimeter thick and use a cookie cutter to cut out the gingerbread men. I was able to make 15 gingerbread men.
2. Place them on a lined baking sheet and gently fold over the arms to encase a cake pop stick. Bake these in a preheated at 180°C/350°F fan for round 8 minutes if you like them nice and soft.
3. After a minute of being out of the oven, gently twist the cake pop stick to loosen but don’t take them out yet. Leave the gingerbread men to cool completely and then gently twist out the cake pop sticks.
4. To make the candy cane hearts, bake in the oven for around 7 minutes at 100°C/210°F fan. You can then bend the candy canes around a heart shaped cookie cutter and push the cake pop stick into the candy cane to make a lollipop. Be careful as they are a little hot though. Leave them to cool and set completely before you push them back into the gingerbread men.

JUNE 10, 2022: While some may hold steadfast to the belief that breadfruit makes you a coward, 39-year-old Karlene Johnson is debunking that myth by leaving her comfortable teaching job to make breadfruit-based pastries.
Johnson told THE WEEKEND STAR that it has been one year since she decided to leave her 16-year-long career as a literature teacher and challenge herself to start her company, Something Country Jamaica, that specialises in bulla, bammy, cookies, pizzelle and gizzada made from cassava and breadfruit flour.
