I finally mastered FUDGY BROWNIES! I won't use another brownie recipe again

If you're looking for an indulgent, fudgy brownie that is extremely flavorful and not cloyingly sweet, this recipe is it! Literally one of the best brownies I've ever had! With that beautiful shiny crinkled top (which took me a while to figure out ????), and gooey, rich interior, this will be your new favourite brownie recipe!
INGREDIENTS:
- ¾ cup (105 g) dark chocolate - I use 50% dark chocolate, semi-sweet chocolate chips okay too
- ¾ cup (90 g) flour - regular, all purpose
- ½ tsp salt
- ½ cup (113 g) unsalted butter - room temperature or melted
- ¼ cup (53 g) unflavored vegetable oil - I use canola
- 1 cup (200 g) white sugar - granulated
- ½ cup (100 g) soft brown sugar - packed, see note 1 on blog
- ⅔ cup (75 g) cocoa powder - unsweetened
- 1 tsp coffee powder
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
NOTE: In the video I mention 1/2 a cup or 100g of butter, but it should be 113g of butter as stated in the ingredients list above :)
Bake at 160 °C (320°F) with the fan on for 22-25 minutes depending on how fudgy you want your brownies to be (I recommend 22 minutes). If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Once done, poke a toothpick into the center and it should come out dirty.

Slutty Brownies (Oreo Stuffed Brookies)
Not a great name but these bars are AMAZING: From Scratch Brownies sandwiched with chocolate chip cookies and OREOS!! Heaven!
RECIPE:

FOR THE COOKIES:
1/2 cup unsalted butter melted
1/3 cup granulated sugar
1/2 cup light brown sugar packed
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 1/2 cups chocolate chips semi-sweet or milk
24 Oreos any flavor
FOR THE BROWNIES:
4 ounces unsweetened baking chocolate coarsely chopped
3/4 cup unsalted butter
1 3/4 cups granulated sugar
3 large eggs
1 tablespoon vanilla extract
1/2 teaspoon salt
2 tablespoons unsweetened cocoa powder
1 cup all-purpose flour
INSTRUCTIONS
Preheat oven to 350°. Line a 9×13” pan with foil and spray with cooking spray.
Make the cookies: Cream together butter and sugars in the bowl of a stand mixer or in a large bowl using a hand mixer. Mix in egg, extract, baking soda, and salt. Stir in flour, then stir in chocolate chips.
Press the cookie dough into the bottom of the prepared pan. Top evenly with Oreos.
Make the brownies: Place the baking chocolate and butter in a large, microwave safe bowl. Heat on HIGH power for 2-3 minutes, stirring every 30 seconds, until chocolate is smooth. Stir in sugar. Add eggs, vanilla, and cocoa and stir well. Add flour and stir carefully.
Spread brownie batter over the top of the Oreos in prepared pan.
Bake for 30-40 minutes until the top looks done and the center is no longer jiggly.

No Oven Brownies Recipe
How to make easy fudgy brownies!
Ingredients:
125g dark chocolate bar
1/4 cup + 1 tbsp unsalted butter
1/3 cup cocoa powder
1/2 tsp instant coffee powder
2 large eggs
1/2 cup white sugar
1/2 cup brown sugar
2/3 cup all purpose flour
1/4 tsp baking soda
1/4 tsp salt
bake in prehetead oven for 180c in 35mins (gas range oven)

The perfect brownie is fudgey on the inside, not too wet where it’s molten, has a crispy chewy edge, and that shiny crackly paper thin crust on top. There’s only one word to describe it - perfection. And i’m going to show you how to achieve all this in this easy, no fuss recipe.
Eggs - this is where it takes a bit of attention. Make sure that the eggs are at room temperature and if they’re not, submerge them in warm to hot water for about 10 minutes. If you have a whisk The meringue and air bubble that you whip in the eggs wil result int hat papery thin crackly top.
Light brown sugar - I’ve tested this with dark and light and for me, the light brown sugar is the most balanced. Dark brown gives too much of that molasses flavor and is almost too sweet.
Because we’re going to be using a combination of melted chocolate and cocoa powder, I didn’t feel the need for coffee like many recipes have. I’ve done it with coffee and it deepened the flavor but also felt really overpowering. We’re keeping this super straightforward and simple, but still packs a chocolatey punch.
The PERFECT BROWNIES Recipe:
Preheat the oven at 350º F.
8 tbsp High-Quality butter like Kerrygold silver
8 oz chocolate (I used 72% Dark)
Melt the butter and chocolate softly in a double boiler
In a large bowl whisk:
2 eggs room temp
until it becomes a frothy texture
Add
2/3 cup white sugar
1/3 cup light brown
1/2 tsp kosher salt
1 tsp vanilla
Whisk until ribbon-y
Sift in:
1/3 cup flour
1/3 cocoa powder
1/4 tsp baking powder
Mix until it barely comes together.
Bake at 350ºF for 22 minutes. Allow to cool 1 hour before cutting and serving
