Aloo-Paneer Bird Nest
For the Tikkis
1 cup Potatoes (boiled & mashed)
½ cup Green Peas
¼ cup Capsicum (chopped)
2 tsp Garlic (chopped)
2 tsp Ginger (chopped)
2 Green Chillies (chopped)
1 tsp Chilli powder
½ tsp Turmeric Powder
2 tsp Chopped Coriander
1 cup Paneer (grated)
Salt to taste
For the Paneer Eggs
½ cup Paneer grated
½ tsp Black Pepper
Salt to taste
Mint and Coriander Chutney
1 cup Mint Leaves (Chopped)
½ cup Coriander leaves (dhania patta)
1 Green chili (chopped)
½ wedge Lemon (juiced)
Pinch of Black/Regular salt
Method:
1. To Make the tikkis, take all the ingredients in a bowl, adjust the seasoning & combine well
2. Shape the tikkis into rounds & make a small dent in the center with your thumb to form the nest shape. Now dip these in a thin batter made with flour & water, then coat in broken vermicelli, at this point the tikkis should look like a nest
3. Chill the birds nest for 15 mins
4. Now heat oil in kadai & deep fry till golden
5. For the paneer eggs, mix the ingredients a bowl, shape into small eggs & deep fry in hot oil for 30 secs
6. In the mean time, prepare the green chutney by mixing all the chutney ingredients in a mixer
7. For the assembly, take the birds nest, add a spoon of green chutney in the center, add couple of leaves of fresh coriander & place 3 small eggs over it
8. Serve hot with ketchup & green chutney
9. Gobble! Gobble! Gobble!

Bird Nest:
200g Egg Noodles
Vegetable Oil for Frying
Vegetable:
100g Snow Peas
100g Celery
50g Carrot
100g Broccoli
1 tbsp Minced Garlic
Seafood:
250g Shrimp
250g Squid
Seasoning:
1/2 tsp Salt
1 tsp Chicken Seasoning
1 tbsp Oyster Sauce
1 tbsp Soy Sauce
1 tbsp Tapioca Starch & Water

HOW TO MAKE SPAGHETTI NESTS
A different way to serve spaghetti. Make a statement for your next dinner party, people will love it :)
Ingredients: (makes 8 nests)
300g of spaghetti
100g of fresh spinach (you can use frozen if you like)
250g of ricotta
1 large clove of garlic
80g of grilled peppers
1/2 cup of parmesan
100g of pancetta
1 tin (400g) of diced tomatoes
1/4 cup of breadcrumbs
salt and pepper
Bechamel sauce:
20g of butter
3 tablespoons of plain flour
1/2 cup of milk

Recipe:
INGREDIENTS
2 cups boiled noodles
2 tbsp corn flour
Oil for deep frying
1 tbsp ghee
2 bay leaves
1 tsp peppercorns
1 tsp green cardamom
2 tsp ginger garlic paste
1 cup sliced onion
1/2 cup almond powder
1 tsp red chilli powder
½ tsp garam masala
½ tsp turmeric
1 1/2 tbsp coriander powder
Salt as per taste
250 ml water
2 cup diced chicken
1 cup green peas
1/2 cup sweet corn
1/2 cup red bell pepper
1/2cup julienne carrots
1/2 cup yellow bell pepper
1/2cup green capsicum
1 cup tomato puree
1 tbsp cream
Garnish:
Chopped red chillies,
Almond flakes
Mint leaves
INSTRUCTIONS
In a plate mix boiled noodles and corn flour. Add the noodles to a sieve and press it with the back of a spoon to hold it in the centre and fry until the nest shape is formed.
In a pan add gheem bay leaves, peppercorns, green cardamom, ginger garlic paste, sliced onion, almond powder and mix it well. Add water and stir again, add red chilli powder, garam masala, turmeric, coriander powder, salt and mix again. Add water again along with diced chicken, green peas, sweet corn, red bell pepper, yellow bell pepper, carrots, green capsicum, tomato puree, cream and mix it all together.
Add the cooked chicken gravy to your noodle nests along with a half boiled egg and garnish with chilli and microgreens.
