How To make Bird's Nests with Cheese
FILLING:
2 Eggs, lightly beaten
1/2 c Cheese, parmesan, grated
2 tb Cheese, ricotta
2 ts Mint, fresh, chopped OR
1/2 ts Mint, dried
1 pn Pepper, black, ground
PAStrY AND GARNISH:
8 Pastry, phyllo, sheets
1/2 c Butter, clarified **
3/4 c Cheese, Kasseri, crumbled OR
3/4 c Cheese, feta, crumbled
8 Olives, calamata (garnish)
** See "Clarified Butter" recipe. Filling: ======== In mixing bowl, combine eggs, Parmesan, ricotta, mint and pepper. Set aside. Preheat oven to 375 F. Cut phyllo pastry sheets in half crosswise and cover with waxed paper and a lightly dampened kitchen towel. Place 2 half sheets of phyllo, one on top of the other, horizontally on a work surface, trim off and discard a 1 inch strip from 1 short edge of sheets. Pull top sheet toward you so that it overlaps bottom sheet by about 1 1/2 inches. Dot exposed surfaces with clarified butter. Place a 1/2 inch diameter dowel or no. 11 knitting needle about 1 1/2 inches from long edge farthest from you. Fold edge over dowel.
Spread about 1 teaspoon of filling along edge of folded flap. Fold dowel over filling; then carefully roll up phyllo toward you, leaving 1 1/2 inch strip at bottom edge. Holding edges of the pastry at ends of dowel, gently press them toward center, forming pleats as you would on a curtain rod. (Do not worry if some filling oozes out.) Firmly holding ends of pastry to maintain pleats, carefully pull out dowel. Bring rolled edges of pastry around, forming a circle; the unrolled border will form bottom of each bird's nest. Transfer bird's nest to ungreased baking sheet. Brush all exposed surfaces of pastry generously with clarified butter. Bake until golden, about 15 minutes. Remove baking sheet from oven and place about 1 1/2 tablespoons of Kasseri in center of each nest. Return to oven until cheese is bubbly. 3 to 4 minutes. Place an olive in center of each nest. Serve hot. Stir Fried Chicken in Potato Nest
Ingredients:
3 K&N’s Tender Brest
4 Potatoes
3 TBSP Corn Flour
1 Egg
¼ cup Onion
1 cup Bell pepper (Julienne)
¼ cup Tomato (Julienne)
¼ cup Mushroom (Sliced)
¼ cup Cauliflower
2 tbsp Ketchup
1 tbsp Garlic, chopped
1 tbsp Brown sugar
½ tsp Black pepper
2 Tbsp of Soy Sauce
¼ cup of Water
2 Tbsp of Oyster Sauce
2 tbsp Chili sauce
Salt to taste
2 tbsp Vegetable Oil
1- Cut the potatoes very thinly julienne form and put them into a bowl then add egg, cornflour and mix it well.
2- Now take a strainer and put these thinly sliced potatoes into the strainer in nest shape.
3- Next, take a pan, add cooking oil, and let it hot. Then put this strainer into hot oil and fry for 3-4 mins. Take out the potato nest from the strainer and fry it again without strainer till light brown.
4- thaw the K&N’s Tender Brest as per Instructions on the pack and slice.
5 - In a large skillet over high heat, add the oil and allow it to get hot. Add the K&N’s Tender Brest and let it cook for a few minutes, remove the chicken to a plate and set aside.
6- Add a touch more oil to the hot skillet and add the garlic, saute for about a minute and add in the ketchup, soy sauce,chili sauce, black pepper, salt and oyster sauce. Whisk together with water.
7-Now add the prepared K&N’s Tender Breast slice back in and cook it for about a minute or two then add vegetables and cook until the sauce thickens. Serve immediately in the Potato nest.
Preparation Time: 20 mins
Cooking Time : 20-25 mins
Serve: 2-3

ترکیب:
ایک باؤل میں لمبائی میں باریک کٹے ہوئے ٓلو، انڈہ اور گوبھی ڈال کر اچھی طرح مکس کر یں۔
اب ایک چھاننی لیں اس میں میرینیٹ کئے ہوئے آلو گھونسلے کی شکل بنا کر چھاننی میں ڈالیں۔
ایک پین میں کھانے کا تیل گرم کر یں اوراس میں میرینیٹ کئے ہوئے آلو 3-4منٹ فرائی کرلیں۔
اب اس چھاننی میں سے آلو کا گھونسلا (Potato Nest)نکال کر گرم تیل میں ڈال کر مزید 2-3منٹ فرائی کریں۔
پیکٹ پر دی گئی ہدایات کے مطابق K&N's TendeBrestنرم کر لیں اور لمبے پیسیسز میں کاٹ لیں۔
پھر ایک بڑے پین میں تیز آنچ پر کھانے کا تیل گرم کر کے K&N's TenderBreast کے لمبے پیسیز کو ایکسے دو منٹ کے لئے پکا لیں اور چکن نکال کر ایک سائیڈ پر رکھ دیں۔
پھراسی برتن میں کھانے کا تیل گرم کریں اوراس میں لہسن ڈال کرتھوڑا سا پکائیں ۔
اب اس میں کیچپ، سویا ساس ، چِلی ساس ، کالی مرچ، نمک، اوسٹر ساس اورپانی ڈال کر اچھی طرح مکس کریں۔
پھراس میں فرائی کیا ہوا چکن ڈال کر تیز آنچ پر2منٹ کے لئے پکائیں۔

salt - 1 tsp
soya sauce - 2 tbsp
carrot - 1 julienned
capsicum - 1 julienned
boiled potatoes - 2 julienned
cheese - 1 cup julienned
For birds nest :
bread slices - 20 or as required
vermicelli - 1 cup or as required
Above measurements make upto 20 birds nest

Boiled potatoes - 3
Green chilli finely chopped - 1
1/2 tsp red chilli powder
1/4th tsp garam masala
1/4th tsp jeera powser
1/4th tsp coriander powder
1/2 tbsp maida
2-3 tbsp corn flour
water
Salt to taste
Oil
1 cup vermicelli

Aloo-Paneer Bird Nest
For the Tikkis
1 cup Potatoes (boiled & mashed)
½ cup Green Peas
¼ cup Capsicum (chopped)
2 tsp Garlic (chopped)
2 tsp Ginger (chopped)
2 Green Chillies (chopped)
1 tsp Chilli powder
½ tsp Turmeric Powder
2 tsp Chopped Coriander
1 cup Paneer (grated)
Salt to taste
For the Paneer Eggs
½ cup Paneer grated
½ tsp Black Pepper
Salt to taste
Mint and Coriander Chutney
1 cup Mint Leaves (Chopped)
½ cup Coriander leaves (dhania patta)
1 Green chili (chopped)
½ wedge Lemon (juiced)
Pinch of Black/Regular salt
Method:
1. To Make the tikkis, take all the ingredients in a bowl, adjust the seasoning & combine well
2. Shape the tikkis into rounds & make a small dent in the center with your thumb to form the nest shape. Now dip these in a thin batter made with flour & water, then coat in broken vermicelli, at this point the tikkis should look like a nest
3. Chill the birds nest for 15 mins
4. Now heat oil in kadai & deep fry till golden
5. For the paneer eggs, mix the ingredients a bowl, shape into small eggs & deep fry in hot oil for 30 secs
6. In the mean time, prepare the green chutney by mixing all the chutney ingredients in a mixer
7. For the assembly, take the birds nest, add a spoon of green chutney in the center, add couple of leaves of fresh coriander & place 3 small eggs over it
8. Serve hot with ketchup & green chutney
9. Gobble! Gobble! Gobble!
