Ingredients:
1/2 tbsp oil
2 medium (320 g) potatoes diced
1 medium (120 g) carrot chopped
2 (60 g) celery stalks with greens, chopped
3 garlic cloves minced
1 1/2 tsp onion powder
3/4 tsp dried oregano
1/2 tsp dried marjoram
1/3 tsp red pepper flakes
4-5 cups (1100 ml) vegetable broth or water
2 bay leaves (optional)
Salt & pepper to taste
Three 14 oz cans white beans (about 4 cups), rinsed and drained
1/4 cup (60 ml) coconut milk canned
1/2 to 1 cup kale chopped (optional)
Fresh herbs to garnish

How to make Navy beans soup
This recipe is for 6 persons.
Cooked in pressure cooker.
Food ingredients:
- 600g navy beans
- 100g onion
- 6 garlic cloves
- 40g chopped bell peppers
- 3l water
- 2 tbsp salt
Browned flour: - 0,4 dl oil
- 3 tbsp flour
- 2 tsp cayenne pepper

Spinach & White Bean Soup: 30-minute Vegan Meal!!
This vegan soup comes together in 30 minutes. It's healthy, hearty, and full of flavor. Perfect for meal prep because it stays fresh in the refrigerator for days!
Print this recipe on my website:
Serves 6:
1 small onion, finely chopped
¼ cup olive oil
1 (15 ounces) can cooked white beans
1-pound spinach leaves, roughly chopped
2 zucchinis, diced
2 garlic cloves, grated
32 ounces (4 cups) vegetable broth
Salt and black pepper, to taste
¼ cup fresh lemon juice
1 teaspoon dried dill
2 tablespoons chopped fresh mint
Cook the onions with the oil in a pot over medium heat until soft. About 5 minutes.
Add the garlic and warm through 20-30 seconds.
Add the zucchini and cook over medium heat for 5 minutes.
Place all of the spinach in the pot and cook 2-3 minutes or until it wilts.
Add the beans and the broth. Season with salt and pepper and bring to a boil.
Reduce the heat to medium-low and cook for 10 minutes or until the vegetables are soft and tender.
Add the lemon juice along with the fresh herbs and stir to incorporate.
Taste and adjust the seasoning if needed.
Serve!
