How To make Navrathna Kurma
100 g Paneer (or cottage cheese)
2 c Mixed boiled vegetables
3 Tomatoes
2 Onions
1 ts Ginger and garlic paste
1 1/2 ts Chilli powder
1/2 ts Turmeric powder
2 ts Coriander powder
1 ts Garam Masala
1 c Milk
3 ts Fresh cream
3 ts Ghee
To taste salt Ghee for deep frying 1. Grate the onions
2. Put the tomatoes in hot water . After 10 minutes take off the skin and
chop 3. Cut the paneer into small pieces and deep fry in ghee.
4. Heat oil in a vessel and fry the onions for a few minutes
5. Add the ginger and garlic paste and fry for 1/2 minute.
6. Add the chopped tomatoes, turmeric powder, coriander powder and chilli
powder, Garam Masala and salt. Fry for at-least 3 to 4 minutes. 7. Add the boiled vegetables, milk, cream and fried paneer pieces
8. Cook for a few minutes

MIXED VEGETABLE KORMA
Ingredients
3 medium carrots, peeled and cut into diamonds
2 medium potatoes, peeled and cut into 1 inch pieces
¾ cup cauliflower florets
12-15 French beans, cut into 1 inch pieces
2 tbsps oil
1 tsp cumin seeds
3 medium onions, sliced
1 tbsp garlic paste
½ tbsp ginger paste
¾ cup coconut-cashew nuts-green chillies paste
¼ tsp turmeric powder
¾ cup Rainbow Evaporated Milk
½ tsp garam masala powder
Fresh coriander sprig for garnish
Method
1. Heat oil in a large clay pot, add cumin seeds and let them change colour.
2. Boil carrots and potatoes in sufficient water in another clay pot.
3. Add onions to the hot oil and sauté, stirring occasionally, till golden brown.
4. Add garlic paste and ginger paste and mix well. Sauté, stirring continuously, for 1-2 minutes.
5. Add coconut-cashew nut-green chilli paste, mix well. Add turmeric powder and mix; continue to sauté for 1-2 minutes.
6. Drain and add the boiled carrots and potatoes to the masala and mix well. Add cauliflower florets and beans and mix well. Cook for 4-5 minutes, stirring occasionally.
7. Add salt and Rainbow Evaporated Milk and mix well.
8. Add garam masala powder and mix. Cook for 1 minute and take the clay pot off the heat. Transfer into a serving bowl.
9. Garnish with coriander sprig and serve hot.
Preparation time: 15-20 minutes
Cooking time: 25-30 minutes

Ingredients for Navratan Korma Recipe:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Sautéing Vegetables:
- Cauliflower florets- 1 cup (75 gms)
- Carrots, sliced- 1 cup (75 gms)
- Green Peas, shelled- 1/2 cup (75 gms)
- Beans sliced- 3/4 cup (75 gms)
- Potato, sliced- 1 big (90 gms)
- Salt-1 tsp
- Turmeric Powder- 1/2 tsp
Onion-Cashew Paste:
- Fried onions- 2 medium (130 gms)
- Cashew nuts- 12
Tempering:
- Shahjeera- 1/2 tsp
- Green Cardamom- 4
- Cloves- 4
- Cinnamon- 4 pieces
- Black Peppercorns- 8
Spice Powders:
- Kashmiri Chilli Powder- 1 tsp
- Coriander Powder- 1/2 tsp
- Cumin Powder- 1/2 tsp
- Kasuri Methi Powder- 1 tsp
- Garam Masala Powder- 1/4 tsp
Other Ingredients:
- Ghee-4 tbsp
- Green Chillies, chopped- 2
- Ginger Garlic paste- 1.5 tsp
- Tomato purée- 3 tbsp
- 5 cashews halved and fried
- Raisins (Kismis)- 15-20 halved & fried
- Pomegranates (Anaar dana)-1/2 cup
- Coriander leaves, fine chopped- 3 tbsp
Process:
- Heat ghee and then add the tempering.
- Once it splutters, add the sliced carrots, beans & potato.
- Fry on medium heat for 3 mins and then add the other vegetables. Also add the turmeric & salt, mix & fry on medium heat for 2 mins.
- Now shift the vegetables to make a gap in the center and add chopped green chillies & Ginger garlic paste. Mix and fry for 2-3 mins on low heat.
- Now add the Fried onion-cashew paste, mix and fry on medium heat for 2 mins.
- Next add the tomato purée, Kashmiri Chilli Powder, Coriander & Cumin powder and fry on medium heat for 5 mins.
- Add 150 ml water and cover & cook on low heat for 5 mins
- Now add the fresh cream, Garam Masala powder & roasted Kasuri Methi powder. Mix and simmer for 2-3 mins
- Now add the cubed paneer, fried cashew, raisins, pomegranates & chopped coriander. Give a mix and simmer for 2-3 mins.
- Serve with Naan, Paratha or Rumali Roti.
