How To make Mocha Walnut Christmas Cookies

semisweet chocolate chips, divided

instant coffee powder

boiling water

flour

teaspoon
baking soda
1/2
teaspoon
salt
1/2
cup
butter, softened
1/2
cup
sugar
1/2
cup
brown sugar, firmly packed
1
each
egg
1/2
cup
walnuts, chopped
Directions:
Preheat oven to 350F. Melt 1/2 cup chocolate chips over hot water or in microwave. Stir until smooth; cool to room temperature. In small cup, dissolve coffee in boiling water; set aide. Combine flour, soda, and salt; set aside.
In large bowl, combine butter, sugars and coffee; beat until creamy. Add egg and melted chocolate; mix well. Gradually add flour mixture. Stir in remaining 1-1/2 cups chocolate chips and walnuts.
Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake at 350F for 10-12 minutes. Let stand 2-3 minutes before removing from cookie sheets; cool completely.

Ingredients:
Cake:
175g butter
175g brown sugar
3 whisked eggs
45ml (3Tbsp) espresso
175g flour
10g (2 Tsp) baking powder
pinch of salt
120g ground walnuts
walnuts and chocolate coffee beans for decoration
Frosting:
125g butter
200g powdered sugar (icing sugar)
15ml (1 Tbsp) espresso
4 drops vanilla extract
Preparation:
Cake:
Mix butter and brown sugar
Add eggs and espresso and mix well
Add flour, baking powder, salt and ground walnuts while mixing
Divide into two 20-cm baking pans (8 inch)
Bake at 180C (350F) for 20-25 mins
Cool down
Frosting:
Mix butter and powdered sugar
Add espresso and vanilla extract
Assembly:
Spread half of the frosting over the first cake.
Add second cake on top and spread remaining frosting over top and side of cake.
Decorate with walnuts and chocolate coffee beans

INGREDIENTS:
Butter 1/2 cup
White sugar 1/2 cup
Brown sugar 1/2 cup
Eggs 2
Vanilla essence 1tsp
Coffee 1-1.5 tbsp
Flour 1 cup
Baking soda 1/4 tsp
Chocolate chips 3/4 cup
PROCEDURE:
Preheat oven at 180 Celsius. Beat room temperature butter until fluffy then add both sugars and beat well.Next add 2 eggs, beating well after each addition.Then add vanilla and coffee and mix well . Now combine flour and baking soda and mix on low speed and add chocolate chips.Mix for a final minute and let the mixture rest for half an hour in the refrigerator.
Line a cookie sheet with baking or parchment paper and scoop the mixture on the baking sheet,leaving space between each cookie. bake at 180 degrees for 10-15 minutes until the edges are golden brown.These cookies will be soft and chewy in the middle and crispy on the edges. Now enjoy with a glass of milk or any way you like!

Butter Pecan Cookies
These butter pecan cookies are to die for! To bring out the nutty flavor of the pecans I toasted them lightly in a brown butter I made myself, and they turned out amazing. That brown butter really adds a depth of flavor to the cookies.
This recipe makes 12 cookies. The dough can be made in advance and stored in the refrigerator. The dough can be frozen but I highly suggest letting the dough thaw some before putting it in the oven.
