How To make Mocha Walnut Cookies
1/2 c Butter
3/4 c Sugar
1/4 c Brown sugar; packed
1 Egg
1 1/2 c Flour
2 tb Instant coffee powder
No crystals 1 ts Baking powder
1/2 ts Salt
1/2 ts Cinnamon
2 ts Vanilla
1 c Walnuts; finely chopped
12 oz Semi-sweet chocolate chips
Preheat oven to 350~F. Cream butter. Add both sugars and beat well. Add egg and mix well. Add flour, coffee powder, baking powder, salt, cinnamon, vanilla, and 1/2 cup walnuts. Mix well. Wrap dough in wax paper and chill thouroughly in refrigerator (at least two hours). Remove dough from refrigerator. Using rounded teaspoonfuls of dough, shape into balls using palms of hands and place 2" apart on an ungreased cookie sheet. Bake 12-15 minutes. Remove cookie sheet from oven and working quickly place 3-4 chocolate chips in the center of each hot cookie. When chocolate has softened, spread over top and sprinkle with balance of walnuts. Remove to wire rack and cool. -----

INGREDIENTS:
100 grams salted butter, room temperature
100 grams brown sugar
100 grams all purpose flour
10 grams cocoa powder
1 teaspoon instant espresso powder or instant coffee powder
1 teaspoon cornstarch
1/4th teaspoon baking soda
Chocolate Chunks + Sea Salt, as needed (optional)
Bake at 180 degrees Celsius / 350 degrees Fahrenheit for 14 minutes. Let cool for 15 - 20 minutes.

2 tablespoons (14g) cocoa powder
½ teaspoon (2g) instant espresso or coffee granules

¼ teaspoon (1g) salt
⅓ cup (80mL) water
½ cup (120mL) coconut oil
3 large eggs at room temperature

Ingredients:
Cake:
175g butter
175g brown sugar
3 whisked eggs
45ml (3Tbsp) espresso
175g flour
10g (2 Tsp) baking powder
pinch of salt
120g ground walnuts
walnuts and chocolate coffee beans for decoration
Frosting:
125g butter
200g powdered sugar (icing sugar)
15ml (1 Tbsp) espresso
4 drops vanilla extract
Preparation:
Cake:
Mix butter and brown sugar
Add eggs and espresso and mix well
Add flour, baking powder, salt and ground walnuts while mixing
Divide into two 20-cm baking pans (8 inch)
Bake at 180C (350F) for 20-25 mins
Cool down
Frosting:
Mix butter and powdered sugar
Add espresso and vanilla extract
Assembly:
Spread half of the frosting over the first cake.
Add second cake on top and spread remaining frosting over top and side of cake.
Decorate with walnuts and chocolate coffee beans
