How To make Mexican Salsa Fria
2 lb Peeled ripe tomatoes,
-chopped 3 tb Olive oil
3 tb Wine vinegar
1 c Chopped sweet onions
Salt to taste Freshly ground pepper to -taste Coriander to taste 4 Or 5 canned green chilis,
-chopped 1 cn Mexican tomatillas, chopped,
-or 3 sm Green tomatoes, chopped
(With steaks, hamburgers, and other broiled meats and fish.) This, sometimes simply called "Salsa", is as its name implies, cold sauce. It is very popular in the West and Southwest. Combine all ingredients and serve very cold. The coriander, sometimes known as "cilantro", or Chinese parsley, should be fresh; if not available, substitute oregano. Molcajete is a mortar and pestle made from volcanic stone. If you don’t have one, don’t worry. You can use a cast iron pan and keep your ingredients warm. I’ve seen some wonderful skillets that are deep enough to keep all the ingredients in place. Stone bowls work great for these recipes.

Grill your favorite veggies and incorporate them in the delicious salsa options.
* A few cooked potatoes in addition to a fully roasted pepper would really highlight the salsa and the flavor profiles.
Salsa Verde/ Green Salsa
5-6 Tomatillos
3-4 Roasted Poblanos
1-2 Roasted Anaheim Peppers
1/4 Roasted Onion
2 Garlic Cloves
Juice of Half Lemon/ Lime
Cilantro To taste
Salt to taste
Salsa Roja/ Red Salsa
4-6 Tomatoes
1/2 Roasted Onion
Roasted Jalapeño or Serrano to taste
2 Roasted Puya Chiles
Lemon/ Lime juice to taste
Salt to taste
Chili options- Guajillo, Chiltepines, Chile de arbol
Nopales/ Cactus
Sprinkle of Lemon juice
Salt to taste
*If you cook to the slimy texture and you don’t like that. Cook your Nopales until they look a little drier. That should take about 6 Minutes.
Green Onions
Oil
Salt to taste
Avocado and Queso Fresco are optional.

Ingredientes:
Para la Salsa
- 2 cucharadas de aceite
- 5 tomates rojos
- 4-5 dientes de ajo
- 1/2 cebolla blanca
- 1 cucharadita de ajo en polvo
- 2 cucharaditas y media de consomé de pollo
- 1/2 cucharadita de pimienta y comino
- 1/2 cucharadita de orégano
- 210 gramos de puré de tomate
Para cocer la pasta
- 2 litros y medio de agua
- 250 gramos de pasta plumilla no.2
- 1/4 de cebolla blanca
- 3 dientes de ajo
- 1 cucharadita de sal
- 1 cucharada de aceite de oliva
- 1 puño de cilantro ó al gusto
- Queso gouda ó el de tu agrado

ENSALADA DE CODITOS CON JAMÓN
1 paquete de pasta de copitos de 200 gr cocidos con un trozo de cebolla, 2 dientes de ajo, 3 hijitas de laurel y sal (cocción de 8 a 9 minutos)
2 zanahorias medianas en cubitos cocidas
1 lata de grande de elote chica escurrida
1 rebanada de jamón con grosor de 1/2 cm (200 gr aprox)
1/2 taza a 1/3 de taza de crema de su preferencia
1/2 traza a 1/3 de taza de mayonesa
1 cdta de mostaza
1 cdta de consomé casero o sal
