1 lb Ground beef
17 oz Can whole kernel corn,
-drained 15 oz Can tomato sauce
1 c Picante sauce
1 tb Chili powder
1 1/2 ts Ground cumin
16 oz Carton low fat cottage
-cheese 2 Eggs, slightly beaten
1/4 c Parmesan cheese
1 ts Dried oregano
1/2 ts Garlic salt
12 Corn tortillas, divided
1 c Shredded cheddar cheese (4
-oz) Preheat oven to 375F. Brown meat, drain. Add corn, tomato sauce,picante sauce, chili powder, cumin. Simmer, stirring frequently, 5 minutes. Combine cottage cheese, eggs, parmesan cheese, oregano and garlic salt. Mix well. Arrange 6 tortillas on bottom and sides of lightly greased 13x9x2 inch baking dish, overlapping as necessary. Top with 1/2 the meat mixture. Spoon cheese mixture over meat. Arrange remaining 6 tortillas over cheese. Top with remaining meat mixture. Bake in preheated oven about 30 minutes. I hope you all enjoy this wonderful Fusion Creamy Mexican Corn Lasagna. Please make this recipe comfortable for your own home.
Bake at 375 Degrees for 30 Minutes
Check the oven at 15 minutes into cooking as Cotija will brown quickly.
If your Cotija is crispy and brown Place a parchment paper over or a sheet of foil to prevent burning.
Ingredients
4 Fresh Corn or 4 Cups of corn of choice
12 Sheets of Lasagna
3-4 Cups Heavy whipping cream or Media Crema
1/2 -1 Cup Mayonnaise
1 1/2 Cup Cortija Cheese
1/2 stick of butter or 1/4 Cup Butter
1-2 Cups Quesadilla Cheese (Casique Brand)
1 cup Mexican Cheese Blend (Costco Brand)
1 Cup Medium Cheddar Cheese
1 cup Panko Crumbs
Tajin
Oil
Optional- Crumbled Hot Cheetos
Cotija Cream Sauce
3-4 Heavy Whipping Cream
1/2-1 Cup Mayonnaise
1/2 cup Cotija Cheese
1 Tbs Butter
Roasted Corn
Oil
Corn

*add butter last minute of roasting. Mix well and the butter will melt with remaining heat.
Lasagna was boiled with 1/2 Teaspoon salt, a Splash of oil, and enough water to allow the pasta to move around and cook.
*Costco Mexican cheese blend (Monterey Jack, Queso Asadero, Medium Cheddar, Quesadilla Cheese). This cheese blend works great with this recipe as it has all the cheeses necessary to complete this dish.
*Half and Half should work well for your cream sauce if you can’t get a hold of heavy whipping cream.

Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna
Ingredients:
• 2 lbs. ground beef
• 1 poblano pepper (seeded and diced)
• 1/2 cup chopped onion
• 1 cup water
• 2 envelopes of taco seasoning
• 1 can black beans rinsed and drained
• 1 28oz can diced tomatoes undrained Rotel or Mexican
• 9 flour tortillas (8 inches)
• 1 can refried beans
• 4 cups shredded Mexican cheese blend
Instructions:
1. Preheat the oven to 350 degrees
2. Spray a 9×13 baking pan with cooking spray.
3. In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.
4. Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.
5. Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.
6. Place 2 tortillas in the bottom of a greased 13×9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.
7. Spread with half of the refried beans and half of the beef mixture.
8. Sprinkle with 1 cup cheese.
9. Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).
10. Top with remaining tortillas and 2 cups cheese.
11. Cover with sprayed foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
12. Serve with sour cream and fresh pico de gallo.

This Mexican lasagna recipe is a definite must try. It is a twist on an Italian lasagna meshed with a Mexican influence. It's made with a Mexican inspired tomato sauce, yellow corn tortillas in replace of lasagna noodles, ground turkey and peppers, seasoned with taco seasoning, black beans and a Mexican cheese blend .
Recipe ????????????:
2-3 tbs olive oil
1 lb lean ground turkey
3/4 cup red onion
1/2 cup (seeded) jalapeños
1/2 cup red bell peppers
1 1/2 pack taco seasoning
1 tbsp water (add to ground turkey after seasoning it)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dry onion flakes
1 cup black beans
1 8 oz bag mexican shepherd cheese
1 8 oz bag white cheddar cheese or mozzarella cheese 
1 bag yellow corn tortillas ( layer count is up to you )
Sauce Recipe:
1x 14 oz can fire roasted tomatoes
1 cup medium chunky salsa
Toppings:
sour cream
Picco de Gallo 
cilantro 
Bake @ 375F for 30 minutes uncovered on the middle rack.
