How To make Marinated Shrimp On Rosemary Skewers
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
2 cloves garlic
finely minced
1/2 teaspoon hot pepper flakes
12 large shrimp :
peeled and deveined
salt and freshly ground black pepper 4 twigs of rosemary with thick woody stems about 6 to

8-inches in length 8 slices lemon -- 1/4-inch thick
salsa: 1 pint red and/or yellow cherry tomatoes stemmed and
halved :
or quartered 1 clove garlic finely minced
1/2 cup black olives :
pitted and
-- coarsely chopped 2 tablespoons finely chopped parsley
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
salt and freshly ground black pepper
In a small bowl whisk together the olive oil, lemon juice, lemon zest, garlic, and hot pepper flakes. In a shallow dish pour the marinade over the shrimp. Cover, refrigerate and let marinate for 15 to 30 minutes.
Preheat a charcoal grill or grill pan on the stovetop.
Skewer 3 of the marinated shrimp, alternating in a decorative pattern with 2 of the lemon slices, on each of the rosemary twigs. Grill the shrimp for 2 to 3 minutes per side until just cooked through.
In a bowl combine the cherry tomatoes, garlic, black olives, parsley, lemon juice, olive oil, salt and pepper.
Serve the grilled shrimp on a bed of the salsa.

Rosemary Seafood Skewers!
INGREDIENTS-
• 6 jumbo scallops
• 6 jumbo shrimp
• 4 large rosemary sprigs
• ¼ cup olive oil
• 1 Tbsp honey
• 1 tsp lime zest
• 2 Tbsp lime juice
• 2 garlic cloves, grated
• 1 tsp smoked paprika
• 1 tsp kosher salt
• 1 tsp ground black pepper
Instructions-
• Preheat grill over medium high heat
• In a medium size bowl, whisk together olive oil, honey, lime zest, lime juice, garlic, paprika, salt and pepper.
• Add the scallops and shrimp to the marinade and cover for 10-15 minutes.
• Remove leaves from ¾ of the stalk of Rosemary
• Thread two to three scallops or shrimp onto each stalk
• Grill the skewers for 6-7 minutes per side, basting throughout with the garlic lime butter throughout until cooked through.
• Serve with grilled vegetables and couscous or rice.

INGREDIENTS
1 pound shrimp (extra large 26/30) (deveined, with the shells removed)
LEMON HERB MARINADE
4 sprigs thyme (leaves removed and finely minced)
4 sprigs rosemary (minced)
2 cloves garlic (minced)
¼ cup Italian parsley
¼ cup olive oil
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon honey
juice of 2 lemons
INSTRUCTIONS
Make the marinade. Mix all ingredients for the lemon herb marinade together in a zip top bag. Add the shrimp to the bag and massage lightly to coat. Place the marinating shrimp in the refrigeration and allow it to marinate for 1 hour.
Grill the shrimp. Preheat your preferred grill (this works well on gas and charcoal) to 450 degrees F. Remove the shrimp from the marinade and place it directly on the grill grates. Grill the shrimp for 2 minutes per side until opaque throughout.
Serve hot. Remove the fully cooked shrimp from grill to a serving platter. Serve hot with fresh lemon wedges. This shrimp is also delicious in salad or on pasta or rice.
