How To Make Marinated Mushrooms
INGREDIENTS:
1 pound small button or Bella mushrooms - cleaned
1 small jar rinsed pimento peppers
3/4 cup jarred drained pearl onions
2-3 tbsp. chopped fresh parsley
Dressing - OR can use favorite Italian, Greek or Vinagrette Dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar / red wine vinegar
1/4 cup finely diced red onions
3-4 cloves minced or sliced garlic
1 tsp. dijon mustard
2 tsp. brown sugar
1/2 tsp. dried oregano
1 tsp. whole black pepper corns
1/4 tsp. crushed red pepper flakes - optional
1 bay leaf
salt and pepper to taste
*Mix above ingredients and whisk well to combine
Clean mushrooms and place in salted boiling water. Cook for 3-4 minutes
until tender. Drain and cool to room temp.
In bowl mix cooled mushrooms, dressing, chopped parsley, drained pimentos
and pearl onions. Gently mix.
Place in lidded container and refrigerate for 8 hours or up to 3-5 days.
Serve at room temperature.
Enjoy.

Dehydrated & Marinated Mushrooms // Raw Vegan
This recipe is perfect for salads, wraps, burgers or on its own - it adds a nice spicy flavour to whatever you adds it to. It's super easy and simple to make. All you need is a knife, bowl, spoon and dehydrator (or an oven).

For the recipe you will be needing mushrooms (as many as you desire), tamari sauce, black pepper and piment d'espelette (chili can be used instead). Cut up the mushrooms as you like, mix well with the other ingredients and let it marinate for about 20 minutes, then put onto a tray and dehydrate until dry (about 2-4 hours). You could possibly also do this with an oven on its lowest degree - just keep an eye on it, so it doesn't burn.

How to cook mushrooms properly
This is a basic video that will show you the proper technique of how to properly fry mushrooms. Although you can cook mushrooms in many different ways, this is a good basic skill to have.
You can clean mushrooms by gently wiping them with a damp paper towel before cooking them. If you soak or wash mushrooms directly in or under running water, they will absorb the water and take longer to cook. Both methods are acceptable, but if you want to cut down cooking time, wipe them, don't soak them.
